The main elements for me are lamb (ideally shoulder, slow roasted), roast potatoes, cabbage/greens/kale and mint sauce. Anything else is superfluous.

No yorkshire puddings. I only have them with beef. Apart from that, we don't have set side dishes for specific roasts. Just roast potatoes and whichever veg we fancy. Just had roast lamb with potatoes boulangère and broccoli.

I always do roast lamb for Easter Sunday and do it with Dauphinoise, spring greens, roasted carrots and minted peas.

Peas and lettuce cooked together.
Asparagus.
Courgettes grated and briefly stir fried with garlic.
Mint sauce made with fresh mint.

No Yorkshire puddings as I only have them with roast beef.

Mint sauce and gravy - homemade obviously.

Yorkshire puddings, they go with any roast and lots of other things too.

Two types of potato, usually roast and then one of mash, new or dauphinoise maybe duchess.

Some green veg - whatever I have in. Green beans, cabbage (this could be red) broccoli.

A yellow or orange veg, so carrot and swede mash, or roasted carrots with honey, carrots, parsnips (roasted or mashed with garlic and ginger) or sweet potato.

Caponata (cuts through all the grease!) and couscous. I slow roast shoulder of lamb with a whole bulb of garlic, rosemary and white wine, then mash the roasted garlic through a sieve into the pan juices and squeeze in juice of a lemon at the end (the gravy...ta-da!) Wouldn't have it any other way.
