What's a good vegetarian cookbook?

I'm after a good vegetarian cookbook - reasonably easy and quick meals - can anyone recommend one please?

Also Australian Womans Weekly (sold in Waterstones)

The Sarah Brown ones are good. Can't remember any titles off the top of my head, but there is a huge one with all sorts of recipes from posh to easy. Also, try the Vegetarian Society for some recommendations, maybe?

i like Madhur Jeffrey cookbooks.

not strictly veggie, but the many, many recipes in her books are veggie, can be made veggie and are gorgeous!

as a long term foodie veggie, I'd say my favourites are "Greens" or any of the others by Annie Sommerville, any of the Moosewood series (both american) or any by Celia Brookes Brown, esp The new vegetarian.

I love veggie cookbooks!

Great - I'm looking forward to some good ideas here.

I very much enjoyed the Gate brothers' Vegetarian Cookbook but understand they have a more 'accessible' second publication which makes sense.

I have to say, you can pick up most Rose Elliot publications and find a lot of decent recipes.

Rose Elliot is a good one. No glossy pictures, but just lots of good very easy to make not expensive meals.

Some veg books are full of soups. I'm not going to spend hours int he kitchen making a soup.

I love Moosewood too - and Rose Elliot, and Sarah Brown. The Australian Women's Weekly veggie and almost veggie books are good too. The Good Housekeeping Vegetarian Cookery book is another of my well-thumbed ones. And Madhur Jaffrey's Eastern Vegetarian Cookery. And the Cranks books (old and new). Paul Gayler's vegetarian cookery book is quite interesting and different).

MadameCholet, you don't spend hours in the kitchen making soups. You just leave them to bubble away while you do something more interesting

yes ..soup cooks itself here, 20 mins prep and a stir here and there

dont follow recipes very well
always tinker and adjust..
it so bugs dh so of course i do it all the more

Best veggie cookbook by far (in my opinion) is Leith's Vegetarian Bible. There are literally hundreds of recipes and most use ingredients that you would normally have in your cupboard. I've cooked from it more than any other recipe book and almost all meals have been very successful. There are lots of recipes that include beans and pulses and they taste NICE. Amazing.

The best title of any of the vegi book I have is "The Enchanted Broccoli Forest" - unfortunately I don't really rate the receipes

I have the big orange book, "The Cranks Bible" by Nadine Abensur. Quite expensive at 16.99 but its nearly 400 pages and has tons of recipes, everything from veg to making bread.
