Does anyone have a really nice cheesecake recipe they would be willing to share?
I like thick, heavy cheesecakes. My only requirement!

Jane's Patisserie biscoff cheesecake is a favourite here.

I would agree too with trying Jane's Patisserie recipes. I don't like a dense cheesecake, I like it much lighter hence why I never make her recipes! I see them popping up all the time on baking page I am on, they are of the dense variety as far as I can see.

Cheesecake Topping:
285ml tub of elmlea double whisked up to stiff

Then gently stir though:
600g full fat cream cheese
150g icing sugar
Generous glug of good quality vanilla essence

I have no idea if this counts as ‘heavy’. It is thick. I turn it into a chocolate orange cheesecake. I use chocolate digestives on the base and decorate with mandarin segments and little segments of chocolate orange. I also add orange juice, rather than milk. It’s very easy and tastes lovely.

Do you like a baked cheesecake or a no-bake set in the fridge variety? Personally I love baked cheesecake - the BBC Good Food raspberry one is my go-to recipe but I’ve also made some burnt basque ones which are creamier and quicker to make

It's a consistency thing @popncrisps, using elmlea gives a denser smoother texture.

I find with normal double cream it ends up a bit sloppier and to get it to be firmer I have to add more icing sugar which in turn makes it a bit too sweet/sickly

Personally preference though I suppose!

Now I like a Jane's Patisserie cheesecake, but they aren't close to a baked cheesecake for texture.

I prefer baked cheesecake.
I’ve never made one myself before, always bought them, but wanted to try making one myself.
A stupid question - when you use cream cheese is it just Philadelphia or similar?, or is there a different type that I’m missing?

Yes just full fat cream cheese - own brand or Philadelphia. Must be full fat. American Philadelphia is thicker/less liquid so try to use a UK recipe otherwise it might not set right.
If you’re not that fussed about having a biscuit base do try a burnt basque one, they are so easy. I’ve used this recipe (with 350g sugar) and it’s superb https://spanishsabores.com/burnt-basque-cheesecake-recipe/

I have literally just made a cheesecake this evening.

I used a recipe similar to the one FrangipaniBlue posted but I used gingernut biscuits for the base and put lemon and lime juice and lemon zest in the cream topping. Bloody lush.

This is a good recipe that works albeit I don't think I've ever added the sour cream on the top. Just serve with double cream and some fruit on the side.

Oh.Dear.God.

I just made the nigella one.
I used reduced fat cream cheese because that’s what I have in the fridge. I just added the ingredients to MFP and without the compote it is 790 calories per portion Shock.
There was me thinking the topping to base ratio was a bit off so I spooned the excess topping onto a biscuit (or two Blush ) and stuffed them in my mouth whilst tidying the bowls up as a ‘little treat’.
