following on from the shopping thread lets all post our fave budget meals and see if we can save a few £££££££.We always revert to heinz beans on thick toast with a big handful of grated cheddar when we are boerd and can't think of anything It is cheap and delicious!

ANY kind of soup - you can make delicious soup from a bag of tatties, a bag of carrots, an onion and a veg stock cube. OR a big tub of mushrooms, an onion and a stock cub

corned beef hash
macaroni cheese
scrambled eggs
cauliflower cheese (sometimes i add a chopped up boiled egg- try it- its delicious!)

Dp works long hours and checks out the supermarkets late at night so we always have ridiculously cheap marked down foods in the freezer

Leftover soup with leftover bread croutons. (Chicken & sweetcorn is current favourite but vegetable good too).

Scrambled eggs.
Baked potatoes & beans.
Macaroni cheese.
Tomato pasta bake (better with slices of mozzarella on top).
Anything based on minced beef.

hi salty
dh makes them - i think he uses a saucepan and adds mustard seeds, chilli powder, curry leaves and tumeric to some oil and heats it up, then adds the quartered (cooked) tatties. only takes 10-15 mins

or maybe its curry powder not chilli? im not usre though!

Home made veg soup - (Whatever's in season, but cheap and delicious is leek, carrot, potato and thyme)

Omlette

Stirfry cabbage (with bacon, garlic, mushrooms and rice). Cabbage is always cheap!

Best cheap pasta sauce - get a chunk of that 'roulette' or whatever it's called - the cream cheese with garlic and herbs. Melt in a pan, mix in some milk if it is too solid. pour over pasta.

Twice baked potato. Bake them, scoop out and mash, add bacon and cheese. Can also seperate an egg, mix in the yolk and then whisk the white and fold that in. Re-fill skins and then bake again until puffed up.

Bean bake:

Tin of mixed beans
Tin of chopped tomatoes
1 to 2 teaspoons chilli powder
Any cooked veg you want to add (broccoli, sweetcorn, courgettes, carrots, peas, peppers, aubergine etc).

Put the above in a casserole dish and cover with grated mozzarella. Bake for about 30 mins at about 180 degrees. Yummy.

Spaghetti or linguine with olive oil, garlic, chillies. Often add parmesan or prawns too.

We are on friendly terms with our butcher so

  • some lovely sausages, beans of some kind (black eye good), tinned toms, onion, garlic, any herbs lying around. also sometimes add chickpeas, courgette, peppers etc if we have any.

cook the lot and serve with rice/pasta/ cous cous, and maybe a nice salad.

  • homemade soup - always delicious, good for using up left over veggies.

  • jacket potatoes - ds favourite

  • fishcakes made with tinned tuna and mash

I also try and make two meals from one ( so lmake loads of mince and have shephards pie one day and add kidney beans, chilli etc and have chilli con carne another, or casserole one day and pie the next)
