Anything on toast. Eggs, cheese, beans tinned spaghetti, tinned sardines, cottage cheese, bacon, sausages.
Nice noodle/pasta pots

noodles. Instant on its own or with a bit of creativity; pretty much all palettes can be catered for.

my current favourite is soba noodles but there’s a lot you can do with them.

Leftovers from dinner that can be reheated without much faff.
Not as nice as straight from the oven, but I sometimes make ovened wedges (like a jacket potato, not a lot of oil, if any, but in wedges) and reheat those with beans or something less dry to cover them

The lunch is for an 18 year old. Apparently she’s not keen most tinned stuff either. I’m going to offer cheese toastie, noodles, or jacket potato with cheese (maybe leftover chilli if I make it the night before)

My 15yo sorts his own lunch in the holidays when we are at work. Unless there are special circumstances, make sure there is food available and let them crack on! Can't be doing with fussy adults

It’s a friend’s daughter who is coming to my city for an interview. She is getting a really early train, going to the interview, stopping at mine for a bit (I offered) then train back home. The food situation - she doesn’t usually have lunch because her mum does full cooked breakfasts everyday but due to her early journey she won’t be eating. I live alone and a lazy cook so mainly have canned, salads and sandwich stuff.

Goodness, in that case I'd just offer a pot noodle option, or some bread rolls with a choice of fillings (bacon, sausage, if it has to be hot) and tell her to buy a meal deal in town if those aren't good enough for her.

In that case, I'd go for Chinese dumplings. You can get frozen ones from most supermarkets and they're ready in 5 minutes. Soy sauce to dip. She'll think your're amazing!

Unless there's a neurodiversity or similar drip-feed coming, surely the young lady should just take what's given?
Especially as you're so kind to let her stop over. Not sure why she can't just buy herself some lunch. She is 18 and attending a job interview not a 6 year old that needs an adult chaperone.

In any case, surely it's also more normal for her to suggest what she 'will' eat rather than just giving you a list of what she won't.

Even stranger after the update. Most 18 year olds would grab something to eat after the interview and then go for a wander round the shops till time for the train home.

At the moment, i'm making diced chicken tikka (marinaded then grilled) with roasted vegetable cous cous and chickpeas. I portion it up on a Sunday evening into tupperware and eat that all week with an apple and a banana. Can be eaten hot or cold.

I've learned that if i kid myself i'm going to make something every day I will forget, starve all day and then binge when i get home. I am too fat and I need to make changes.

This is another one of those Mumsnet "doing something slightly nice for someone else is like donating a kidney" isn't it? If my friend's 18 year old was coming to my town for an interview, of course I'd have them stay over and give them something nice to eat. Of course I would! And I'd expect the same for one of mine.
