What can I do with split red lentils?

If it makes any difference I'm a single person so don't want to make batches of the same thing!

I'm not vegetarian but I am trying to cut down the amount of meat I consume. I'm also trying to lose weight.

I don't like beans or peas.

I make a coconut dahl with red lentils which is a regular staple. I usually add cubed roasted sweet potato and a load of spinach. It includes a tin of tomatoes and a ton of coconut milk. Freezes well/keeps well in the fridge.

I add (with oats) when cooking mince, you could also add to curry, make dhal, there are recipes for lentil flatbreads, etc.

I'm a single person too and made slow cooker lentil and squash Dahl recently. Only 4 portions. One for dinner, one for lunch the next day. Only 2 in the freezer if that's acceptable

I do Leek Lentils either as side for fish & pork or just as Lunch.

All you need to do is chopp some Leek, fry in a pan with some butter, add Lentils and some veg stock cook until Lentils are tender, add a splash of cream and a teaspoon of mustard, seaon & serve.
You can also add a bit of lemon juice if you have any.
It's my go to comfort food!

They are great for padding meals out/thickening them. Throw a handful or two in soups or casseroles or use them in a vegetarian chili with tinned tomatoes, potatoes, onion, pepper (I'd say beans too but note you don't like them).

I made a red lentil cheese loaf once which was really tasty

I do a spag bol with mine. I'm like you and am trying to cut down on meat. The recipe uses carrot, garlic, onion, tinned toms, creme fraiche, a tsp of sugar and a tbsp of balsamic vinegar. A sprinkle of cumin is optional

If you haven't bought the lentils already, you might want to try green or brown lentils.
I sometimes cook them like @DancefloorAcrobatics , but with onion instead of leeks

Wash, soak, throw in a saucepan with one halved onion, a few garlic cloves and whatever spices you feel like. Salt and pepper. Add some tomatoes and some coconut milk, or don't, if you don't feel like it.

Book for about 25 min or so. Blend with one of those stick blenders.

@40unicorn this one I think. Ive never used the coconut sugar, always add tin tomatoes and coconut milk, and spinach right at the end. Plus cubed air-fried sweet potato /squash/aubergines/cauli if I have it to hand

Thanks. Will try this. I usually make it with yellow lentils and it takes a while. As well as the above ingredients, a thinly sliced and well cooked onion is good.

I add them to anything I use mince in - at the beginning and with a bit more water. Chilli / bolognaise / mousakka etc

I also throw them in most soups

Carrot and Lentil or bacon and Lentil soup. I use 25% lentil and minced lamb in Mousaka, or same ration of lentil to minced beef in cottage pie/bolognaise/chilli etc. You could also make dhal.

Lentil & bacon soup - can easily be done without the bacon. Lentil Dahl. Anything I'd normally use mince in can be done with lentils instead.
