I want my flapjacks CHEWY, goddammit!

My mum used to make lovely chewy flapjacks but mine always seem to end up crumbly and I don't know why. I've tried syrup, no syrup, and different kinds of sugar. Anyone have any foolproof recipes with guaranteed chewiness.

My mum can't remember hers, in case you're wondering.

oooh send them here. I stopped making flapjacks coz my dh wanted chewy ones and I made mine crunchy. I much prefer crunchy ones.

southeastastra · 13/03/2008 17:09

mine are useless, but i think do don't cook them for very long

southeastastra · 13/03/2008 17:10

rather the longer you cook them the crunchier. going to make some in a min.

Ecmo · 13/03/2008 17:12

does this help

midnightexpress · 13/03/2008 17:15

Ecmo, they're not even crunchy, more crumbly - just fall apart.

SEA, how long is not long? I think I usually give them about 20 mins at about 180.

Ooh thanks. Do you think margarine instead of butter would make a difference?

tbh don't take advice from me, i'm a flapjack failure, was thinking i cook them on too high a temp for too long.

much more helpful thread here

MaryAnnSingleton · 13/03/2008 17:24

add mini marshmallows - yum !

southeastastra · 13/03/2008 18:16

right i did some. i cooked them for 20 mins on 150 degress and they're chewy! i'm so pleased (with myself) as i've had so many attempts!

southeastastra · 13/03/2008 18:17

i can't understand why the delia recipe i used suggested 40 mins cooking time. they'd be like bricks

midnightexpress · 13/03/2008 18:22

Yeay SEA! I'll give it a go and come round for yours if they fail again.

We bought some scrummy home made ones from the local health store last week with dried pears and pecans and some sort of dark brown sugar in them.

But must not run before I can walk.

Oh god. Just looked at that other thread.

Condensed milk.

Oh my.

Fortunately I don't have any in.

MaryAnnSingleton · 13/03/2008 18:26

it's like brownies - IU always undercook them to make sure they're lovely and squidgy

midnightexpress · 13/03/2008 18:32

Am unconvinced by marshmallows though MAS? Please elaborate.

OP posts:
southeastastra · 13/03/2008 18:32

i wish i'd added something to them though they are very sweet . brownies is another i'd like to attempt.

MaryAnnSingleton · 13/03/2008 18:34

I have never made them with marshmallows, was just thinking that my mum makes rice krispie cakes with them and melted butter toffees and they are really chewy, so figured it might do for flapjacks

MaryAnnSingleton · 13/03/2008 18:35

do Gordon Ramsay's brownies - v good

SueW · 13/03/2008 18:38

I made chewy ones this week and last although they are always crunchy round the edges. That's ok though cos I quite like crunchy and DD likes chewy

Melt
4 tbsp golden syrup
8 oz spreadable butter (I used Lurpak spreadable)
12 oz caster sugar

Allow it to boil up a little bit (I only did this the last two times accidentally but maybe it has made the difference!)

Add in 1 lb rolled oats and 4 oz plain flour.

Mix well.

Put mixture into roasting tin. Mine's 12in x 10in

Cook on 140C (fan oven) for 16 mins.

Allow to cool. Turn out and cut into pieces.

eternalstudent · 13/03/2008 18:40

Dessicated cocnut always helps somehow. Just a couple of tbspns

Littlefish · 13/03/2008 18:41

Pleeeeeeeeese try mine! I've cut and pasted this form the other thread.

I've never, ever known it to fail. The recipe looks a bit unconventional, but is unbelievably delicious!

8 oz margarine
4 oz plain flour
2 oz syrup
8 oz oats
1tbl spoon water
8 oz sugar
2 x Pinch bicarb
pinch salt

Dried fruit, choc chips, nuts, seeds etc.

Melt margarine/syrup/water and bicarb.
Mix in flour, oats, sugar and salt.
Stir in any dried fruit, nuts etc.
Grease a baking tin approx 10x8"
Cook at 150? for 35 mins (lower the temperature and shorten the cooking time if you have a fan oven
Cool in tin a bit, then score, and then remove before completely cold

It is gorgeous.

midnightexpress · 13/03/2008 18:47

Thanks everyone. I may well have a cook-in, try them all and report backon my findings.

Any excuse.

Ah so glad I logged on just now, just been saying to the kids that I'll make flap jacks for them (never done them before). I'll try your recipe littlefish and report back with the results!

midnightexpress · 14/03/2008 09:26

Littlefish they're in the oven. Looking good.

More anon.

Just tried your littlefish - SO much sugar though - my teeth were aching as I poured it all in to the bowl
