It is freezing here today so I have a big pan of lentil and bacon soup bubbling away for lunch and a spicy beef and potato curry in the slow cooker for tonight. Trying to do next week's meal plan and so far I've got as far as a cottage pie on Sunday and am planning to try out a recipe for a white chicken chilli one night. Gammon with cabbage and Cauliflower cheese may also make an appearance.

What are your favourite meals this time of year that make you feel all cozy?

I made an amazing chicken noodle soup this week. Lots of garlic and ginger in it to help ward off all those winter bugs but some of my favourites are -

Lentil soup
Chilli
Lamb hotpot
Beef rendang
Big baked potato with anything.

Chicken curry. I add whatever veg or beans I fancy. Mushrooms, green beans, spinach all work well.

I have perfected Vegetarian versions of Mince and of Stovies, after both of us had lived in Scotland and had them. There isn't much more warming than either of those!

Oh some fabulous ideas thank you. @WeirdPookah as a Scot myself mince & tatties is a firm favourite for me! Have never heard of vegetarian stovies though, how do you do yours? Stovies always cause a debate as nobody I know makes them the same. Some use beef, some mince, some square sausage, some link sausage or corned beef!

Would love to hear more about veggie stovies. I've made versions in the past using sausages or Quorn mince, but can't find the recipes I used. Both were nice though - sausages maybe better than the mince.

Shepherds pie

Big jacket potato and a cup of lentil soup (or Heinz tomato in an emergency)

@TheLadyIsAVamp @RemusLupinsBiggestGroupie I claim no authenticity for being Scottish, only wishing to replicate what I was shown how to cook whilst I lived there!

I was shown to make it with Lorne, which as far as I know (LOL) hasn't been replicated by any company yet, so I use the Richmond vegan sausages which work really well, and now OXO do a beef cube that's vegan, I tried added one of those and some old fashioned Bisto browning. Also add some barley for some richness to the broth.

@WeirdPookah thanks! Simon Howie does vegetation square sausage but not sure if it's available outside Scotland. I've certainly not seen it where I am in East Anglia. I prefer it with Lorne too and you've just reminded me I need to get my order in to the Scottish butchers for my Christmas and New year bits 👍!

for people who are open to alternative toad in the hole this Five-a-day toad-in-the-hole by Ottolenghi is fabulous (I'm sure its great with beetroot and celeriac but I switched them for carrots and parsnips)

Pork cider casserole with lots of apples, onions, and carrots served with mashed potatoes and garden peas.
Pasta bake with tomatoes, mozzarella and sliced peppers.

I base it on this recipe but add bacon in with the leeks for extra flavour.

Im living on Dahl at the moment, with carrots, green split lentils and coconut milk, yesterday made one and added potato and chickpeas along with everything else.

Im making a beef casserole in the slow cooker next week, a black bean and sweet potato chilli and have a lentil shepherds pie on the list - but may be switched to another dash depending on the weather

Beef or chicken and pearl barley stew with dumplings (lentils and tomatoes make a vegan alternative).

Dal and rice works in any weather and is a great option to stretch your money ...
(Lentils, curry powder, turmeric, chopped ginger and garlic cheaper frozen from world foods aisle) sachet of creamed coconut per 2-3 portions or can coconut milk for 6 portions, veggie stock cube, chilli flakes or chopped fresh, chopped coriander or curry leaves.) once you buy the spices it's seriously cheap, easy to make milder then add chilli for those who prefer hotter, serve with lightly pickled veg, make chappatis (fun with children, easy and cheap)

Vegan style chicken veggie stew, dumplings and mustard mash.
Cottage pie, using a mix of veggie mince and green lentils.
Baked spuds with chillie.
Soup ( any, i love soup lol ) and nice chunky toasty.
Sausages, mash, peas, fried onions and lots of gravy.
Chickpea, sweet potato and spinach curry with rice.

@RemusLupinsBiggestGroupie It's a bit difficult to give exact amounts, as it's very much a recipe that can't go wrong if you have a little more or less of something, so I'll give you my average!

Half a peeled swede, cut into cubes
3/4 decent sized carrots, sliced
2/3 onions, sliced
4/5 mid-sized potatoes, cubed (I leave the skin on)
8 Richmond Vegan Sausages
240g part-cooked barley (I batch cook a bag, freeze in portions)
Plenty of black pepper
Old-school Bisto powder, made up with cold water, to add at end to thicken.

Trick with the sausages is to allow them to barely defrost, enough you can use a sharp knife to cut them into slices really thin, makes the meal seem more generous with sausages slices if they are thin!

Method... All vegetables+pepper in a pan, add boiling water and bring to the boil. Allow to cook until veggies are nearly done, 20-30 mins depending on how big you cut them. Add sausages, cook through another 5-10 mins, add gravy mix and cook to thicken. Easy!
