Fancy dessert in individual glass dishes - any good recipes please?

I am hosting a dinner for 8 people and would love to make a good dessert. I have considered Black forest trifle with cherries in kirsch or something with Limoncello but not 100% sold on these.
I think something with booze would be nice as its Christmas season and we are all adults. I have some beautiful dishes so I may as well use them :)

Smashed up ginger biscuit, drizzled with Limoncello, as a base.
Can of condensed milk whipped up, add whipped, double cream, fold together.
Fold in a little grated zest lemon peel and lime peel(unwaxed), add juice of fruit. I use 2 or 3 of each.
swirl into glass. Taste as you go along. Some fruit is more juicy/sharp that others.
chill
finish with a homemade brandy snap dipped in dark chocolate.
I’ve also decorated with chopped ginger.
Its so quick and simple to make, and always is a hit for me.

I like to do a few options of the below:
tiramisu
chocolate mousse, plain, orange or mint
berry/mango sorbet; pistachio/coffee ice-cream
frozen berries with hot white chocolate sauce
lemon posset
quince syllabub

I put the frozen berries and portion up sorbet/ice-creamthen stash in freezer. Don’t do this if you have delicate glasses, obvs. I use very small Duralex tumblers.Everything else in fridge, done the day before.

Add a tray of extras: little biscuits for dipping, things like Turkish delight, dates, nuts, mints, plus coffee and liqueurs. Job done.

Mont Blanc....meringue, chestnut purée, chocolate

Pavlova.... meringue, cream, fruit.....could look very pretty

Pear Belle Hélène....pear, icecream, chocolate

You could get some culinary gold leaf to decorate your creations.

Eton mess
Cranachan
Tipsy laird (like trifle but with scotch whisky)
Crumble (premake and assemble)
Fancy ice creams and sorbets (can pre-scoop and freeze as ready to serve balls)
Banoffee 'pie' using crashed biscuits as a base....
Affogato

A choice of desserts usually goes down well. A sorbet made with frozen berries with added prosecco or champagne would be a nice option after a big meal. I think individual trifles would be even more successful. Sherry is the obvious alcohol addition but Madeira would be nice too (you could make the Delia trifle with oranges). Chocolate mousse looks nice in glasses and you could add Cointreau.

They’re lovely and they make great liqueurs as well as the booze soaked fruit. You need to make them a few weeks in advance though so I’d do it this weekend if you’re going to. Also, buy nice big fruits - I picked up some of those small dried figs and they weren’t nearly as good. Get the nicest dried fruit you can.

I sometimes just do homemade vanilla ice cream with hot chocolate or butterscotch sauce to pour over with some shards of honeycomb or nut brittle.

This thread has reminded me that I too have some lovely glass dishes that rarely get used. I'll dig them out and use them soon!

I would do a little cheesecake thing

  • ginger biscuits
  • mascapone
  • demerara sugar
  • double cream
  • brandy or whisky

Crumble biscuits up and put some at the bottom of the glass.

Whisk together mascapone and demerara and spirit and put one dollop on the crumbled biscuits.

Add another layer of crumbled biscuits. Another dollop of mixture. Repeat until glass is full.

You can top off with a strawberry or blueberries.

Sorry I don't tend to measure things but it's roughly 1/3 cream to 2/3 mascapone. A table spoon of brandy/whisky

We take leftover brandy from the Christmas bottle and soak raisins in it, in a jar. It keeps all year. A tablespoon of that on vanilla ice cream, with a very thin biscuit, pleases everyone.
