nigella's breakfast bars - something has gone horribly wrong

ok so I used the recipe here and I substituted banana chips for the nuts as dd1's school has a nut ban

and they burnt. Like, straight away. I thought the oven temp was high so I had it down quite a bit from the recipe but still black in minutes

and it didn't seem like there was enough condensed milk

so now I have some very crumbly falling apart (nice-tasting) oats underneath a crust of black

come on

what went wrong

no it wasn't the banana chips - the whole top was just burnt obv the oven was too high

and I seemed to have a hell of a lot of oats for the amount of condensed milk

strange I have made them every week for a month now and the receipe is fine although you must make sure the condensed milk is spreak very well as otherwise it will go crumbly in some place and not in others.

Migt be the suggar/oil coating on the chips thats causing the burning?

I will be v if I can't make them work - they sound so fab and I am getting a bit at the sheer amount of sugar and butter and syrup needed for flapjacks

how hot should the oven be?

cos this recipe says 250 degrees that can't be right

I have a fan oven (I had adjusted the temperature as usual, everything else works) so it doesn't matter whereabouts they go in terms of shelves

I think that the recipe online that you linked to is a US recipe (it uses cups as a measurement). If so, then the oven temperature would be in fahrenheit rather than celsius... which would make a big difference.

250 fahrenheit = 120 celsius

i wonder if it has to be that damp shredded coconut? might that keep them moister for longer? and are you sure the thermostat on your cooker is working? mine is fully ten degrees out, although cooler.

i think the peanuts make them horrible. but apart from that they're great.

there is NO WAY anything could survive an hour in a 250 deg oven and not come out blackened. that has to be a mistake. good one, nige.

My book to compare

1 x 397 can condensed milk
250g rolled oats (not instant)
75g shredded coconut
100g dried cranberries
125g mixed seeds (pumpkin,sunflower,sesame)
125g natural unsalted peanuts

preheat oven to 130C and oil a 23 x 33 x 4cm baking tin

Warm condensed milk in large pan.

Meanwhile, mix together all the other ingredients and then add the warmed milk, using a rubber or wooden spatula to fold and distribute.

Spread the mixture into the tin and press down with the spatula.... to even the surface

Bake for 1 hour, then remove from oven and after about 15 minutes, cut into four across and four down to make 16 chunky bars. Let cool completely.
