...that are not butternut squash or leek and potato? I always make one of those for if people are coming round because they're generally liked by everyone of all ages (young teens to parents) but I'm bored of them but not sure what else will have the same wide appeal

Fasolada, great soup, lots of protein from the beans, use lots of spinach and olive oil at the end.

Which recipe do you use, please?

Bundtbake · 23/09/2023 09:23

@Bundtbake
Sorry posted in wrong place!

Fridge-shit soup. When you empty the bottom of the fridge into the soup maker while your husband is at Tesco doing that week’s shop.

Broccoli and Philadelphia is also nice!

Errolwasahero · 23/09/2023 09:28

Agree parsnip and Apple. Add garlic and cumin, veg stock and a drop/however much you want of coconut milk. 2 parsnips to one Granny Smith apple. Absolutely delicious.

Plain potato soup.
Garlic soup.
Cauliflower soup.
Russian shchi - half plain cabbage, half sauerkraut and plenty of tomatoes.
Vegetarian borscht.
Chickpea soup- my particular favourite is this WaPo recipe: https://www.washingtonpost.com/recipes/chickpea-soup-fried-sauerkraut/
Greek avgolemono (egg and lemon) soup is delicious - most search results come up as a chicken soup but it's perfectly feasible with veggie broth.
Pea soup - there's the more rustic version made from dried peak, or pureed frozen peas with cream.

I love this one - does anyone remember the Tesco ad? Sweet potato, red pepper, coconut milk. It's delicious.

I really enjoy Cookie and Kate’s recipes. Some of my favourites are:
Creamy roasted cauliflower soup - lovely, real richness and creaminess from the cauliflower
Broccoli and cheddar soup - another delicious classic
Curried cauliflower soup - richer than the others due to the coconut milk, so so tasty and full of flavours
Green soup - this feels so good, nourishing and healthy to eat - but may be a bit green for visiting teens!
Spicy black bean soup - the only soup on the list which isn’t entirely blended, but full of flavour and the blender beans give a lovely creamy texture

Lentil and vegetable (celery, carrot, onion and parsley)

dearanon · 23/09/2023 11:34

Carrot and orange soup is a huge hit in my house, Thai coconut, Hot egg, pea and pesto, cauliflower and broccoli cheese soup, etc

Make a thick veg soup, light on the greens and heavier on the roots and red/orange/yellow veg. When you've liquidised it add sugar-free peanut butter and black pepper, and then garam masala. Taste as you go to get the right balance. You don't need to add so much that it tastes of peanut butter or of garam masala. , though of course you can if you want. They can just add flavour and body. Really good.

Chestnut soup! It is absolutely delicious. I used to use a Nigella recipe but it's no longer available online. It's basically veg (carrot, onion, leek), lentils, veg stock and chestnuts cooked down and liquidised. You can add cream, but I don't think you need to.

Yes, I make this around Christmas. Adding a wee bit of brandy or balsamic is lovely too.

Peepshowcreepshow · 23/09/2023 11:57

I often do celery soup though as Oldraver says, it is better with a bit of potato.

mondaytosunday · 23/09/2023 12:29

Mushroom - my mum made a lovely one.
I'm actually making butternut squash soup now. It's a pumpkin recipe though - so will be switching to them as soon as they hit the stores!

MWNA · 23/09/2023 12:35

My current favourite is roasted cauliflower. With added roasted onions and celery. Sometimes I add potatoes if I'm carbing.
It's nice curried too.

Mediterranean soup. Red onions, peppers, courgette, aubergine sometimes if there's on in the fridge. Whole garlic bulb. All roasted in the oven in sun dried tomato oil. Squeeze out the garlic flesh from the roasted cloves. Will use some of this on pasta, and then what is left is added to stock for soup. Some times I liquidise, sometimes not. Add chopped olives. Really gutsy and lovely.

I'm going to try this. Sounds beautiful.

Nana's magic soup on the Tesco website.. I don't know how to do a link. It's lovely

Mushroom soup.

French onion soup, don't forget the cheese crouton.

Gazpacho, there might just be time for one last chilled soup before it really is Autumn.

Spanish bread and garlic soup, a real winter warmer.
