For some reason I said I’d make dessert for a friends get together this weekend 😭. I don’t bake 😂. Any super quick easy suggestions?? Not cheesecake related!

This is super easy and always gets positive comments. Can use Kailua or Amaretto or sherry instead and I don't add the sugar. Sometimes I crumble Cadbury flakes over the top but cocoa is more traditional

Actually I whip a tin or tub of custard with the mascarpone. Can use own brand or Ambrosia or go posh with a fresh vanilla custard from fridge section.

A really old-fashioned (only we call it retro these days) recipe that's quick and easy, but you need to make it either the day before or a few hours before.

Buy a packet of chocolate chip cookies (I used to like the ones with nuts in). Whip a load of cream. Sandwich the cookies together with a thick layer of whipped cream and cover the log shape with more whipped cream. Grate or crumble chocolate on top. Refrigerate several hours or overnight. The cookies become cake like as they absorb the moisture from the cream. When you slice it, slice it on the diagonal and it comes out in vertical stripes.

It's going to be hot so I'd stick to something simple and refreshing like a nice fruit salad full of lovely ripe flavourful fruits - strawberries, raspberries, nectarine, melon. A big splodge of extra thick double cream and that would make me very happy in this heat.

Eton mess with blueberries and a swirl of lemon curd is delicious and you can lighten it up with half and half Greek yogurt and cream.

Dip the biscuits in sherry briefly first, it's even better

Nigella has a great one in her Nigella Express book.

Buy some chocolate crepes and fold into triangles and layer in a baking dish. Drizzle with Hazelnut liqueur and microwave for a couple of minutes until warm. Sprinkle with chopped hazelnuts. Serve with whipped cream into which you have added a little of the liqueur. One crepe per person is a good serving size.

Takes 10 mins tops from start to finish, looks beautiful and tastes fabulous!

Oh yes - I'd forgotten the bit about dipping them in sherry. If you're catering for non-drinkers, you can also dip them in coffee.

Banoffee is a crowd pleaser and if you can get hold of the ready made caramel it’s super easy too.

Tiramisu is also remarkably easy.

Elton Mess ice cream

Buy:
good vanilla ice cream
strawberries
rasberries
shop made meringues

Mash up fruit slightly (save a few for decoration)
Soften ice cream (not difficult in this weather)
break meringues into small pieces

Mix it all together

Line a loaf tin with cling film (wet tin first which helps cling film to stick)
Put mixture in and level the top
Whack into freezer overnight

Easy to transport to party

Serve in slices

Making your own dulce de leche is dead easy. I decant two tins of sweetened condensed milk into three half pint jars and put the lids on firmly. Put them in a slow cooker and cover with water by at least half an inch. Put the lid on the slow cooker and put it on low for at least eight hours - longer just makes it a bit darker and firmer. Keeps forever. Sinfully delicious.

Brownies are my go to! With a tub of cream.

This is the recipe I use. You can swap mars bar out for any other chocolate. Mars is my favourite but I particularly love Kinder bars, too.

I find I need to bake longer, 35 mins, then refrigerate until set before I can cut them. They're still incredibly gooey baking for this long.

Peaches are in season. You could make a deconstructed crumble.

1.5 to 2 peaches per person cut into chunks, boiled in the microwave 5-10 minutes depending on the quantity with lemon juice, vanilla, a tap of dried ginger and a spoonful of Demerara each. That’s your base.

Then your crumble. On a baking tray lined with baking paper put your rubbed mix of flour, golden sugar, oats, butter in a 180 degree oven for ten minutes until golden granola. I used an air fryer in 2 batches (baking paper) to avoid a hot kitchen.
Transport your components in tubs.
Serve with spray cream or a scoop of good vanilla ice cream (cool bag and ice blocks).
Use paper cups and bamboo spoons to serve.
