Please recommend your tastiest vegetable dishes

I'd like to have more proper vegetable dishes rather than doing plain veg on the side. I'm not vegan or vegetarian so happy to include cheese, butter or eggs. Please can you recommend some tasty veg based dishes.

Cauliflower cheese, with a crispy cheese and breadcrumb topping.

Get the green roasting tin book. We often make these and I have a bit of fish or chicken on the side for extra protein.

I make pesto chicken with a selection of roast vegetables. Much tastier than one or two boiled veg. I usually do potatoes, courgettes, mushrooms, peppers, carrots, tomatoes, garlic, olive oil and throw some fresh basil leaves on top. You need far less meat and everybody eats a lot more veg.
The other way to use more veg and less meat is in a stir fry or curry.

Sliced raw red cabbage and red onion (like a coleslaw minus mayo) with vinegar, sweetener and salt. Or sugar instead of sweetener!

Fried green beans until they go a bit charred with garlic and salt.

Roasted cubed butternut squash with rosemary.

What about salads OP for hot weather? Some of my favourites:

  • pear and blue cheese with rocket (saint agur creme can be stirred and drizzled over instead of chunks of blue cheese if preferred)
  • (can be served warm) Roasted pumpkin, spinach, toasted pine nuts, feta or goats cheese, balsamic glaze
  • Watermelon, grilled halloumi, beans and toasted pine nuts
  • Som tam (Thai papaya salad)
  • Greek salad
  • Beetroot, feta, spinach, spring onions, mint, balsamic glaze

Sorry if I misunderstood your post OP.
My ds is veggie and his partner is vegan, so I just substitute beans and/ or tofu for meat in everything I cook for them. It is easy.

Do you mean main course dishes or sides? For sides, we love chargrilling greens and serving with tahini/lemon/oil/yoghurt dressing or creating a lemon/honey/garlic dressing.

Stir fried veg work well with a lot of proteins and you can use a ready made sauce or we usually just add lime juice and soy sauce.

I sometimes make "warm" salsa but grililng/frying peppers, tomatoes and chilli and then chopping them up with some oil and sherry vinegar.

Rice based dishes work well as sides or mains - risotto, pilafs etc - and you can add all kinds of vegetables to those.

Roasted veg is something we do often as a main - roasted tomatoes with burette or goats cheese on spaghetti; roasted meditteranean vegetables with flat breads and humous; roasted cauliflower served with a pilaf of some sort etc.

Vegetable curries and soups are also good options for vegetarian meals. I do a lovely Thai style red curry with butternut, mange tout and tomato. I've also done a similar one with aubergine and cauliflower. I'm keen to try make a version of brinjal bhaji too.

Pasta dishes that are veg based work well too. two of our favourites are tomato, aubergine and chilli topped with feta cheese or spinach, ricotta, lemon and garlic.

Aubergine parmigiana, delicious on its own or with rice or couscous, or as a side with chops, baked gammon, slow cooked lamb, sausages etc.
Ratatouille is another dish that goes with many main dishes, lovely with fish as well as meat. Can be served hot or at room temperature instead of a more traditional salad.

Pasta Primavera and Pasta Norma are tasty vegetable pasta dishes worth trying.
Green beans a la Greque, or mushrooms cooked in the same style, are good for adding interest to ordinary vegetables.

Roasted cauliflower and broccoli. Chop into florets of the same size, drizzle with oil then mix with crushed coriander and cumin seeds. Sprinkle paprika after mixing then roast approx 45 mins.

Burnt aubergine chilli is a lovely tasty vegetarian dinner. I only put 1 tablespoon soy sauce though.

We often roast med veg with olive oil, lemon juice, garlic and oregano (sometimes on their own, sometimes with chicken or sausages as a one pan tray bake). Crumbling in a load of feta cheese and some chopped mint for the last 10 minutes, and then giving it a stir before serving takes it from good to great.

The other mushroom sauce we make is fry off the mushrooms, add a bit of garlic and fry for another minute, then add a good glug of cream and crumble in some (or plenty!) or blue cheese. Heat through, stirring a few times, until all the cheese is melted. Great on pasta or on a steak.
