Please recommend your tastiest vegetable dishes

I'd like to have more proper vegetable dishes rather than doing plain veg on the side. I'm not vegan or vegetarian so happy to include cheese, butter or eggs. Please can you recommend some tasty veg based dishes.

Cut red peppers in half

Put in a couple of slices of garlic and a couple of wedges of tomato

Drizzle with olive oil (and some balsamic vinegar if you like)

Bake for 30-45 mins or till it's all caramelised around the edges and soft

Just fry most veggies in butter and garlic with a drizzle of lemon and you're good to go

Oh my thanks so much what an amazing lot to get through. I'm not vegetarian but want to jazz up my veg a bit and hopefully encourage some of my family to eat more of it. Now just need to go shopping! Thanks again

Big field mushrooms stuffed with a mix of the stalks, red onion, celery finely chopped and fried of mixed with rice, parsley and tarragon and topped with breadcrumbs and your choice of cheese, Stilton is lovely. If using a milder cheese you can also add garlic to the mixture.

Not a recipe as such but I've never been a fan of cauliflower (unless it's smothered in cheese sauce)
But roasted cauliflower is delicious.
Sometimes add cumin etc but it's nice plain.

Also we like cubed courgette and halloumi fried in rose harissa as a side to a bbq type meal.

Oh and roasted garlic sprouts are fabulous too.

Put some red peppers under the grill until the skins get a bit black in places. Slice them up. Slice some nice tomatoes. Add them to a dressing made of honey, balsamic vinegar, bit of mustard, salt, pepper, olive oil and torn up herbs (basil is good or parsley).

Whatever veg I have in fridge sliced up fine and cooked in olive oil, then soy sauce added at the end and a sprinkle of seasame seeds.

I just love cauliflower cheese. Sometimes with broccoli if there is some to use up. Very thinly sliced tomato put on top under the top dressing of grated cheddar and parmesan and breadcrumbs (if you can be bothered/want to elevate it) even better.
