SOS ! Please rescue my Coronation Chicken !

I’ve followed recipe and method slavishly but doesn’t seem to taste right !

Please can someone point me in the right direction .

2 level teasps chopped onion
1 crushed clove garlic
1 tabsp oil
3 level teasps curry powder
1 level teasp tomato paste
75ml water
1 slice of lemon
2 level teasps apricot jam

Sauté onion and garlic in oil 2-3mins, stir in curry powder and tomato paste. Add water, lemon and jam and simmer for 6 mins.
Strain mixture.

This is the stage I’ve reached , it’s very very slow to strain and it tastes bitter .
Any suggestions, please, O Wise Mumsnetters ?

I have enough ingredients to start afresh if that’s what is needed .

Mine always has some yoghurt (or mayo, creme fraiche?) you're missing a creamy component?

I just went to check I wasn’t making it up, I’ve never known coronation chicken without mayo or some sort of yogurt or something.

Is this meant to be a hot coronation chicken?

I usually do cold and it is just shredded cooked chicken; sultanaas that have been soaked so they plump up; mayo, curry powder, apricot jam and flaked almonds on the top.

also if it is bitter you need more apricot jam.

But not sure that recipe is a more coomon one at all.

That seems a very complex recipe, I use mayo, mango chutney, curry powder and sultanas

You need some creme fraiche or mayonnaise surely? Some people also use Greek yoghurt. You can use mango chutney instead/as well as apricot jam. And yes, sultanas.

I have the mayo and the natural yoghurt , and the cooked and cooled chicken all ready and waiting .
The recipe is from a former work colleague, she made Coronation Chicken for every birthday or leaving do , and she’s a great cook . Unfortunately she’s on holiday abroad right now or I’d check with her .
Think I must have copied something down incorrectly ?

It sounds right from a receipt point of view. You just need to add the natural yoghourt and mayo. It will be fine!

And you don't need to strain the curry mix. Just use all of it - onions and everything.

Okay- maybe put in the cooked chicken (leaving some aside in case you need to start again) and add the mayo and mix and then leave it to sit in the fridge for half an hour then test it.

Hmmm - might try adding in more apricot jam .
DH has been despatched to Sainsburys in search of mango chutney , in case Plan B (thanks, @CornishGem1975! ) is needed .

(I use a similar receipt to the one you've used, and it's definitely a superior coronation chicken to the lazy curry-powder-and-mayo method)

My recipe is boned whole boiled chicken. Mix honey mango chutney curry powder and white wine and cook spice mix on hob for 15 minutes. Allow chicken and spice mix to cool. Whip some double cream. Mix double cream and mayonnaise (1:3 ratio) with spice mix. Add bite sized cold chicken. Add grapes and flaked almonds before serving

Try it once you've put the chicken and yoghurt in, it might be fine!

How old is your curry powder/did any of the spices get too hot while warming them?

Is is possible that you burnt the curry powder? Or if it tastes metallic that could be too much tomato purée. I only cooked the chicken in mine - cooled it then mixed with Mayo, Greek yoghurt, mango chutney, curry powder

That’s reassuring , @AmandaHoldensLips - I’ve had the recipe for about five years and this is the first time I’ve tried making it .

Think I’ll add some more jam , then stir a little of the mix into some mayo and yoghurt and see how it tastes then .
