SOS ! Please rescue my Coronation Chicken !

I’ve followed recipe and method slavishly but doesn’t seem to taste right !

Please can someone point me in the right direction .

2 level teasps chopped onion
1 crushed clove garlic
1 tabsp oil
3 level teasps curry powder
1 level teasp tomato paste
75ml water
1 slice of lemon
2 level teasps apricot jam

Sauté onion and garlic in oil 2-3mins, stir in curry powder and tomato paste. Add water, lemon and jam and simmer for 6 mins.
Strain mixture.

This is the stage I’ve reached , it’s very very slow to strain and it tastes bitter .
Any suggestions, please, O Wise Mumsnetters ?

I have enough ingredients to start afresh if that’s what is needed .

It needs mayo and yogurt and curry paste...all to taste.

I add halved grapes to mine when I do coronation turkey at Xmas. Though I had a coronation chicken sarnie with fresh coriander in it and it was fab!

If it tastes bitter then perhaps you may have unintentionally burnt the garlic, onion and curry powder?

I'd start again.

I'd also just do a simpler recipe - mayo/greek yoghurt, city powder, mango chutney, sultanas (or raisins) and cooked chicken. Shove in a bowl and mix. Job done.

Did you burn any of the stuff you were frying like the garlic or curry powder? I can’t imagine why else it would be bitter.

I use a recipe from the archer's recipe book, sautée curry powder/paste, finely diced red onion, garlic with a drop of olive oil, mix into half and half mayo and yogurt/crème fraiche , mango chutney, season, squeeze of lemon, mix in chopped/shredded left over roast chicken, sultanas and flaked almonds.
You definitely need something creamy in that

All done , thanks for all your suggestions - the final result might not be up to HRH’s standards, but am happy !
I abandoned the plan of straining the mix, added more jam and a little of the mango chutney ( largely because DH had gone out in the rain to get it ! ). Soaked a few sultanas and chucked them in for good measure .
