Anyone's mum make a pudding like this in the 1970s/80s ?

My mum used to make a luxurious pud in the 1970s called chocolate refrigerator cake. I've looked for it without success on t'internet.
It might even have been called an ice box cake (not sure) and might have been a Mary Berry recipe (not sure). Sponge fingers on the outside with a rich chocolate moussey filling, then covered all over with whipped cream. It was made in a terrine iirc.
Anyone have recollection of this dessert as I'd love to recreate it !

My mum made sylvabella. It sounds similar.

Sounds like a chocolate charlotte russe

JaffavsCookie · 05/04/2023 19:06

@Lamplit thats not chocolate refrigerator cake 😳 the recipe for that is a modern day tiffin, yum

Chewbecca · 05/04/2023 19:10

Yes, we used to have one just like this for Christmas. Nothing like a tiffin style refrigerator cake, much softer. Does it have a slightly coffee flavour - the sponge fingers were soaked in espresso or maybe Camp? The cream on the outside of ours was very thinly spread.
I think ours came from the Dairy Book of Cookery. I can’t find it online but my mum still has it. Does it sound right?

Lamplit · 05/04/2023 19:38

@JaffavsCookie I agree it's not a refrigerator cake, that's most definitely a tiffin type concoction !
Maybe my mum got the name wrong ?
@Chewbecca got a feeling the sponge fingers were dipped lightly in coffee or camp and the centre was almost ganache like.... it was spread with lashings of whipped cream though ! She did it with a lemon filling too. She did have a dairy diary book which could be what you mentioned !
Funnily enough she did make Slyvabella - did it have nuts and raisins or cherries in ?

It really does sound like a Russe - could be chocolate could be other flavours (the classic being Charlotte Russe). Made either in a proper Russe tin, or any straight sided thingie

seashaken · 05/04/2023 19:44

My mum used to make this! I think it was trifle sponges soaked in sherry with a chocolate topping and whipped cream. I might have her recipe somewhere.

mellicauli · 05/04/2023 19:48

My mum used to soak the sponge fingers in brandy

JaffavsCookie · 05/04/2023 19:49

@Lamplit your mum’s recipe sounds good though

mellicauli · 05/04/2023 19:50

There was another one which went in the freezer and was quite crunch. More of a loaf. Again brandy, sponge fingers, chocolate garnache and crunch sugar. but we didn't have cream on it.

Lamplit · 05/04/2023 19:50

I think she got the names all wrong tbh.
She called a similar pud but iirc with meringue too 'her majesty's gateau' which I don't think was anything like that !
Thanks everyone ! The Sylvabella is definitely something she made !

Is this it?

Maybe just those mash ups mums made in those days !

@seashaken oh it's written on a typewriter. And it's pristine.. what a treasure

GreenMarigold · 05/04/2023 19:54

This is the Dairy Book’s recipe for Chocolate Orange Charlotte that I think someone mentioned earlier. I’ve never made it so not sure if it matches what you are after!

My one was also called chocolate refrigerator cake by mum. The soaked sponges were through the middle along with a cross between a chocolate mousse and ganache. I am going to check out the book next time I visit.

Lamplit · 05/04/2023 20:18

@Chewbecca thanks so much that's it I think. It must have had gelatine in as it had a firm but moussy texture ! Going to bookmark this page !

You are probably right. The sylvabella was less mousse-like. I think it was creamed butter and sugar plus melted chocolate. My mum dipped the sponge fingers in a fifty fifty mixture of rum and water - or possibly brandy.

WhatWouldJeevesDo · 05/04/2023 20:24

Glad you’ve found it @Lamplit . I hope it’s as good as you remember.

This is from an old Mary Berry recipe that my Mum used to make.
