I’m open to anything if I’ve got the stuff in.
I don’t have any chocolate except a bar of posh choc orange.
I have all the usual basics plus cocoa, condensed and evap milk, yoghurt, jam, frozen berries, bananas etc.
Needs to be nut free

Fire away! What always goes down well in your house.

A Victoria sandwich with vanilla buttercream and raspberry jam is the best cake in the world.

Trainnerd · 28/02/2023 15:45

It definitely is Baroness but I fancy going a bit off piste!

We made some good blueberry muffins this weekend. Just a basic sponge cake mixture, with a good amount of cinnamon in, and blueberries. Once the mixture is in the muffin cases, I sprinkled on a mixture of oats, brown sugar and cinnamon before they went in the oven to make a kind of crunchy topping.

In the last couple of weeks I have made;

New York style thick mini egg cookies
Victoria sponge
School cake
Chocolate orange brownies

I am on mat leave and love having home baked treats around for picking at!

TangledUpInDreams · 28/02/2023 17:02

Mary Berry’s banana loaf

Lemon (or citrus) drizzle loaf - might make a blood orange one tomorrow, actually!

Madeleines - my favourite flavour is orange but there are lots of options

Scones with strawberry compote and double cream (lighter than jam and clotted cream)

I made spiced pear and walnut crumble (you can just omit the nuts) the other day, served with mascarpone, which DH said was very nice. (I’m low carbing so didn’t have any...)

Rock cakes, you never see these any more

BigPussyEnergy · 28/02/2023 17:03

Crack Pie?! It lives up to its name. It’s a bit of a faff if you make it completely from scratch. But if you use Hobnobs instead of making your own oat biscuits and just make the condensed milk filling it’s fucking amazing!

HeyMicky · 28/02/2023 17:05

A crumble style tray bake - short bread base, jam and fruit filling, crumble topping. Can double as pudding with ice cream or greek yoghurt on the side

Hedjwitch · 28/02/2023 17:07

Banana bread and lemon drizzle are the favourites here. Not very exciting. Rocky Road also popular

Mysleepingangel · 28/02/2023 17:11

Banana bread and some viennese whirls!!!

Whirls are the easiest and quiekest tbh.

Tisfortired · 28/02/2023 17:19

@BigPussyEnergy big yes to crack pie it’s the number one favourite in this house, agree it’s better when made entirely from scratch. However I have to limit how often I make it due to 1) how long it takes (worth it tho) and 2) how entirely bad for you it is 👀

Tonkerbea · 28/02/2023 17:24

Ok, I need to know more about this crack pie of which you speak

TangledUpInDreams · 28/02/2023 17:30

I definitely need to NOT know more about it!

St Catherine's cakes also known as quick bics.

20 minutes max including cooking time.

4oz Plain flour
1 tablespoon baking powder
2 tablespoons ground almonds
4oz Caster sugar
Combine dry ingredients and stir in
4oz butter to make a dry paste.

Make little balls, pop on a baking tray and gently squash with a fork and place a half cherry or nut on the top of each.

Bake at 190° for 8-10 minutes.

Slide on to a cooling rack when not at crumbling stage.

That crumble sounds amazing you must have an iron will!

sandwich with vanilla buttercream.

I made rock cakes last weekend, went down a treat. "Crackle" cookies are also popular in my house (a chocolate/cocoa dough, roll into a ball, roll the ball in icing sugar before baking) and brownies. I am planning on making some sultana cookies (allegedly similar to what I used to buy in M&S) but not got round to making them yet.

BigPussyEnergy · 28/02/2023 18:55

Crack pie recipe for anyone who dares to try it.

Don’t say I didn’t warn you! Clue’s in the name…

Its like a salty caramel crispy buttery custardy creamy biscuity thing. I made mini ones and my DS said “I mean, they’re nice, but I couldn’t really eat more than one. I might have another one tomorrow.” Swiftly followed by eating 2 more!

These sound like Little Rock cakes?

youngestisapsycho · 28/02/2023 20:32

We used to make these in primary school (37 years ago!) I remembered them a couple of years ago and looked them up.

Love this banana loaf, so easy and delicious. I don’t bother with the icing sugar or banana chips.

There's a lovely recipe site called Sarah's Slice and all her cakes are easy and delicious
Favourites in this house are the chocolate crunch, iced ginger slice and cherry Bakewell crunch.

Badger1970 · 28/02/2023 20:37

Snickerdoodles always go down well with a decent cup of coffee or hot chocolate. They're like a cross between a biscuit and doughnut, rolled in cinammon. Bloody lovely things. We use the Nigella Lawson recipe.
