You can use mince to make a quicker version of some curries.. there’s a HelloFresh one for rogan josh that I’m sure you could adapt even if you didn’t get the kit.
Beef fajitas work with mince.. my fajita spice mix is 1tsp each normal paprika / smoked paprika / chilli powder / chilli flakes.. start browning the mince then add the spices and 1tbsp tomato purée and cook for about 10 minutes. Then I put out wraps, grated cheese, salsa, jalapeños, whatever salad bits I fancy, and everyone builds there own. Or I’d do half as much mince, but roughly chop a red onion and a couple of peppers, then roast them in the oven for about 30 minutes in oil and some of the spice mix.

Vat of Bolognaise sauce for spag bol or pasta bake. Leftovers into Lasagne or Chilli.

Cottage pie using mash or hash browns.
