Quesadillas - What do you put in yours?

I have just had pesto and chicken for lunch

BBQ sauce and chicken is nice too

We also like steak and a few chopped jar chillies

Or just tomato puree and sliced peppers

Looking for inspiration...What else can I try?

I usually just use cheddar, what other cheeses should I try?

(Quesadillas are also a great way of making a little bit of filling go a long way -At the risk of sounding 'Mumsnet Chicken', two average size thighs have just split easily between six tortillas made as quesadillas when if they had been done as wraps would probably have needed a thigh for each one)

I work on the theory of 'if it works in a toasties, it will work as a quesadilla' although I'm sure any Mexican readers will be throwing their hands up in horror! We made lots of variations recently in a bid to use up the Christmas cheese board! Butternut squash with Brie and cranberry sauce, spinach roast beef and Stilton, cheesy leeks, tomato, basil, red onion and mozzarella.
When not being used in a bid to use us the cheese board we tend to stick to the usual left over vegetable chilli with sour cream, left over fajita chicken and veg.

I just made some with steamed sweet potato, corn, spinach black beans and cheese (mozzarella and cheddar). Turned out very nice!

We just do them in a frying pan - I find folded over wraps easier to manage so just put my filling on half the tortilla

I still struggle with the word "wrap" tbf.
Quesadilla means Cheese, maybe salsa (type ingredients).
Anything else makes it not a quesadilla.
Other fillings = Wrap or whatever other Anglo speak you like.
Quesadilla = cheese, not pesto or chicken, etc.

I like chicken (either left over bits off a roast, or small pieces fried if really starting from scratch), plus onion and peppers fried with a teeny bit of olive oil and a generous dash of Schwartz ‘spicy season all’.

Once veg and meat cooked through tip into a bowl, wipe the pan with kitchen roll then put your wrap in the hot pan, sprinkle not too much grated cheese on half, then put some filling back on that half with a little bit more cheese, fold it over and after a minute or so flip to make sure the ‘top half’ is properly toasty and the cheese melty. If really hungry put it to rest and do a second one same way. Reheat the first for the last few second of the second one. serve with crème fraiche and salad. Or just eat it. Squeeze of lime is nice if you have any.

In theory you can do a big round one with one wrap in bottom one on top and flip the lot but sometimes my filling falls out if I have been too generous so I stopped doing that.

reading these suggestions I think chorizo sounds nice, or maybe a firmer cheese like paneer or halloumi might work (with the peppers and onions and spice).

I do have cheese in with all the things I mentioned just didn't list cheese as well as thought that was a given in a quesadilla
