Quesadillas - What do you put in yours?

I have just had pesto and chicken for lunch

BBQ sauce and chicken is nice too

We also like steak and a few chopped jar chillies

Or just tomato puree and sliced peppers

Looking for inspiration...What else can I try?

I usually just use cheddar, what other cheeses should I try?

(Quesadillas are also a great way of making a little bit of filling go a long way -At the risk of sounding 'Mumsnet Chicken', two average size thighs have just split easily between six tortillas made as quesadillas when if they had been done as wraps would probably have needed a thigh for each one)

I'm lazy and do tortilla, salsa, beef mince/black beans and onion fried in taco spices, cheese, repeat and bake in oven, last layer being cheese
Slice it and serve with guacamole and sour cream

Minced beef fried with onions, peppers and paprika. Salsa made with tomatoes, chilli, red onion, lime and coriander. Mix of grated mozzarella and cheddar. Spring onions.

It takes a fucking age to prepare the filling but it’s worth it.

If they work like toasties, then choc spread and banana would work. Especially if sprinkled with icing sugar at the end.

Introduce quesadillish: with a little chocolate spread, a good turn of the chilli and salt grinder, and mini marshmallows (or normal marshmallows snipped up).

Definitely not a quesadilla, but this is quite nice (far nicer than the picture makes it look) and it is a good way of using up any spare tortillas

Yep cheese, usually cheddar but will occasionally use up bits of other kind. Sometimes chicken, sometimes ham and I add tinned Mexican style beans, supermarket ones. But mostly cheese, lots.

Thinly sliced raw mushrooms and cheese. If cut thin enough the mushrooms cook quickly on the high heat, such a great flavour.

I work on the theory of 'if it works in a toasties, it will work as a quesadilla' although I'm sure any Mexican readers will be throwing their hands up in horror! We made lots of variations recently in a bid to use up the Christmas cheese board! Butternut squash with Brie and cranberry sauce, spinach roast beef and Stilton, cheesy leeks, tomato, basil, red onion and mozzarella.
When not being used in a bid to use us the cheese board we tend to stick to the usual left over vegetable chilli with sour cream, left over fajita chicken and veg.

I'm Mexican-American and although your suggestions are far from traditional, it's fine.
I'm always putting different foodstuffs in a tortilla that I'm fairly certain my Mexican-born father and grandparents would shake their heads at me but I don't mind.

It's all good.

oaxaca cheese is the best cheese for quesadillas, I think mozzarella is the closest to it in UK stores.
Really, white, mild and stringy cheese of any sort I guess would work.

I like a little spicy sauce in the center of the quesadilla.

burritos not Quesadillas. That's what PP describe. Just call them burritos. Not Quesadillas.

California Burritos, Breakfast burritos, Vegan Burritos, chicken asada burritos, etc. The modern Anglo word is "wrap".

Mushrooms cooked in garlic, then into the wrap with Swiss cheese. When its cooked, dip in mayo.

But the difference is that burritos are rolled up into deep filled parcles whereas the quesadillas are just folded in half and quite flat so a different shape and therefore a different eating experience! I think we all know they're not authentic quesadillas but for the purpose of the thread, I'm delighted to get all these ideas of what to put in them and the 'if it works in a toastie' rule is genius!
