Dessert for a crowd ideas - no cake tins or mixer

I’m staying in a holiday cottage with no cake tins, or a stand mixer mixer, in a few weeks. And i need a dessert idea for a crowd! There’s an oven, etc, and other utensils, but I just can’t whisk or bake in round tins!

Any suggestions? I don’t mind buying from the supermarket if I can’t think of anything to make, but I just never really love supermarket puddings…

Fruit salad with ice cream? Could serve with something like bought shortbread.

Damnautocorrect · 30/12/2022 10:44

Choc chip bread and butter pudding

pavlova with pre-made meringue (I’ve assumed hand whisk for cream)

rice pudding

puff pastry parcels with Nutella, chopped nuts and banana inside.

lemon posset and shortbread

Banoffee pie with a biscuit base? I've been known to take my hand mixer with me or a balloon whisk for the whipped cream.

This is delicious and easy - just need regular baking dish, no need for mixer

Tiramisu

CheeseMaiden · 30/12/2022 10:49

Maybe some sort of tart- made one a few years back using a roll of puff pastry opened up on a baking tray, made some frangipani mixture with ground almonds and scattered frozen berries over the top- bake in the oven and then leave to cool . So easy to make and looks way more impressive than the effort put in!

AdaColeman · 30/12/2022 10:49

Fruit crumble, economical for a crowd, serve with ready made custard.

Tiramisu, use bought sponge, make in the morning to eat that evening, readily available ingredients.

Ooh some great suggestions!!!

I'd do lemon possets with shortbread. Or take my electric whisk and do chocolate and orange/ cardomom mousses.
Good luck!

Or how about the Nigella frozen berries with warm white choc sauce poured over - piece of piss

Littlebelina · 30/12/2022 10:56

Trifle with lady fingers and bring a whisk?

Or buy a tart case and do a lemon/choc tart or fruit one on a custard base?

gogohmm · 30/12/2022 10:58

What pans are there? Baking sheet?

If so bake essentially 3 circles of shortbread and layer with whipped double cream (balloon whist makes it easier, I've done it with a fork or buy the extra thick cream and don't bother whipping) and berries

kimchifix · 30/12/2022 11:02

Take a hand mixer and cake tin with you. Then you can make whatever you like! Brownies? That's more about melting and folding!

Luckydog7 · 30/12/2022 11:03

Tart tatin?

Sliced fruit. Apples peaches or nectarines work well. Saute in a pan for a few minutes with sugar. The juice should make a fruity caramel. Chuck in a baking tray and cover with puff pastry. Bake until the pastry is cooked and flip.

Nigella Express has a lovely pudding which is dead simple to make. You spread crepes with chocolate spread, drizzle with hazelnut liqueur pop in oven for a few minutes and serve warm with whipped cream. This is my go to easy pud

CrepuscularCritter · 30/12/2022 11:08

How simple do you want to go?

Frozen berries with cherries, meringue and cream would make an Eton mess.

If you have ovenproof dishes and it's cold, then some kind of hot pudding fest, maybe with choices of rice pudding, a self saucing lemon pudding and a chocolate sponge. Plus cream and custard of course.

In the past when we've had guests (and their dc) I've bought pre made Belgian waffles, warmed them through for a few minutes (if you have quite a few then Baking tray in oven for a few minutes). Top them with a scoop of icecream/whipped cream / crumbled flake/ sprinkles/ berries/syrup or honey.
Everyone loves them

shesabitofastrangeone · 30/12/2022 11:14

Fruit crumble. You can either buy fresh fruit and sprinkle with sugar or buy tinned pie topping. Crumble is super easy to make with flour and butter and you can make loads. Perfect for a winter pud!

That’s a good shout. I’ve done something similar before.
melted chocolate / fondue. Loads of fruit, marshmellows and waffles. Everyone gets involved.

I was just about to suggest lemon posset and shortbread Smile

ShaunaTheSheep · 30/12/2022 11:17

Sorry if it's stating the obvious but either

Take the required pans and a hand mixer with you

Or make before you go and take it with you.

Failing that, DIY banana splits and a cheese board.

Santamajormummy000 · 30/12/2022 11:21

Broken biscuit and chocolate “salame”. A little goes a long way and all you need is some baking paper as you roll it up tight and put it in the freezer.
Take a mini bottle of rum and make half of it boozy!
