Turkey and ham pie? An old family friend of ours used to make this post-Christmas and it was delicious. The sauce was just a bechamel with some cream I think, and then a puff pastry lid. She used to add leeks or mushrooms too

LadyMonicaBaddingham · 26/12/2022 15:57

Make a batch of white sauce, mix through the chopped meat and any greens you have. Top with a crumble topping using grated cheese instead of sugar and bake until crunchy and golden.

or I’ve done these before

If you're doing buffet style then This is delicious if you had other stuff to go along with it. I put turkey in it because I'm not majorly fond of it and I slice the ham separately.
It is delicious with the ham.
If I was doing the turkey separately I'd probably do turkey, Brie and cranberry wraps and cut them and serve as small bites.
Veg / cheese and whatever else you have left.

Omelettes?

mrsbyers · 26/12/2022 15:59

Chop all the meat small , Add a savoury white sauce - cheese in it would be nice along with any veg you have and into quick pancake or a tortilla wrap each

How much of each, and what else have you got in?

We usually have turkey puff to use up the last leftovers. Ingredients depend partly on what's in. Some leeks fried in butter, once they've softened add some sliced mushrooms, then turn off heat and stir in any leftover cream or possibly gravy, or both, but just enough to moisten. Add chopped cooked turkey and ham/bacon. Roll out some puff pastry and place on baking sheet. Put turkey mix on one half of the pastry, leaving a border, and pull up the other half to make a giant puff like a Cornish pasty, with a couple of slashes in the top to let the steam out. If you can be bothered, brush with milk or beaten egg to make it a nice golden colour.

(Obviously could also be done as a pie with pastry just on top, in which case shortcrust or suet crust pastry could be used instead of puff.)

Bake in a hot oven until pastry is cooked. Serve with whatever veg needs using up. Very good cold too, the next day.

Pancakes....wrap the meat, cover with a creamy béchamel (or a load of mascarpone, cream and cheese) and bake

NoDairyNoProblem · 26/12/2022 16:03

Shred the meat, fry off some mushrooms in garlic, salt, pepper and a knob of butter and stir in with 2 tins of mushroom soup. Top with mashed potatoes and serve with veg.

AlisonDonut · 26/12/2022 16:05

What's wrong with sandwiches?

MrsMitford3 · 26/12/2022 16:07

def risotto-easy to make for 7 and a lovely combination.
I'd add in peas and asparagus.

Or a chicken and ham pie.

both lovely ideas-risotto easier to stretch

SirChenjins · 26/12/2022 16:12

Oh wow - thanks everyone! Some great suggestions there 😊

Nothing wrong with sandwiches, just can’t face any more (same with cheese and crackers and chocolates)

We had turkey, salad and mash potato tonight which was nice. Needed the salad to counteract the chocolate etc eaten over the last few days.

Hobbesmanc · 26/12/2022 16:14

Pie is the most obvious if you have frozen pastry or can rustle up a decent short crust. You could use left over cream with Philadelphia to make a sauce. Bulk out the turkey and ham with leeks or even cauli. You could whizz up left over bread or even dry stuffing and add grated cheese as a gratinee topping instead of pastry

Use a similar base for pasta? Or a pasta bake or serve with jacket spuds

If you've potatoes and other veg left over hash it in a decent frying pan with the shredded meat. You could add onions, sprouts etc if you're short of left overs. Whisk eggs. Enough to cover the hash. Add and gently cook. Flash the top under the grill to brown. Hey presto. Festive frittata. Lush with salad and some garlicky Mayo.

SnowAndIceLobelia · 26/12/2022 16:19

I have made a bechemel sauce, sauteed onions and celery and put in diced cooked chicken (which is what we had yesterday) and stuffed them into cannelloni shells. I will top with passata and grated cheese and then bake in the oven.

Mmmm that sounds yummy.

Turkey and ham pie -

Sauté onions, mushrooms, add the turkey and ham, dried oregano, fresh tarragon and a pot of creme fraiche, salt and black pepper.

Line a pie dish with puff pastry, put filling on and top with puff pastry. Egg wash for a shine

limitededitionbarbie · 26/12/2022 16:57

Turkey curry and a spaghetti cabonara?

Sandwiches?

Jenje · 26/12/2022 16:58

I'm in the United States and this is a family favorite to use turkey and ham www.brownhotel.com/dining/hot-brown

TerfOnATrain · 26/12/2022 17:00

Everyone has said what I thought.

pie. No other recipes needed.

roll-into the pastry some walnuts or left over chestnuts. Maybe add a leek if you want, use double cream or crème fraiche for the sauce.

nice fresh veg, no spuds required unless you have loads left over.

Wigeon · 26/12/2022 17:04

This Jamie Oliver recipe for and leek pie is absolutely delicious. Basically what @TerfOnATrain is suggesting - and here’s a recipe! You could easily shove in the ham as well as the turkey, in fact I think that might improve it further. We’re having it tomorrow - yum!
