I'm trying to use up all food and not waste anything. Apart from something and mash or something and chips, what do you do with your potato's?

Looking for cheap, family friendly recipes.

Peel & cube, part boil. Throw in a frying ban with bacon/ham/chicken plus any sort of veg and some smoked paprika if you have fresh coriander to add it's a bonus. Leave to simmer for 15 minutes. It's a great way to use up little bits of things. Can also do similar with rice & pasta.

I don’t bother peeling for most recipes anymore. You lose so much. I take out the eyes and any bad scab or damaged parts and then use everything else. Especially with thin skinned summer month potatoes.

There are loads of potato recipes here. The site did a potatoes ‘competition’ earlier in the year (won by chips 😆) but there are loads of more exciting potato ideas too.

Yep! Definitely don't peel.

I've got left over pork, so it's stroganoff and mash tonight. Lots of onion in the mash.

I make potato cakes with left over mash - equal weights mash and flour, bind together with an egg or 2; fry like drop scones. We often have these with bacon, eggs and/or baked beans on a weekend evening.

Veggie hotpot - layer sliced potatoes/sliced onions/dry red lentils in a casserole dish. Season as you go. Repeat until dish is about 3/4 full. Cover generously with veggie stock. Put a lid on dish and cook at 220 for 50 mins. After 50 mins take the lid off and cook for 10 more mins to crisp up the top.

Can add layers of tomatoes, cheese, bacon, liver too depending on who you are cooking for. Probably best done if you've got the oven on anyway - great in the top oven of a Aga!

good cooked in with a fish stew

Greek briam uses potatoes, courgettes, tomatoes. There’s a good rick stein version. I have crumbled feta on it.

Cube them, toss in seasoning and oil, air fry
Great with an omelette as a cheap meal or have on the side of a full breakfast!

I've bookmarked a couple of links shared on this thread. Thanks all! My go-to is parboiled potatoes, chopped and fried up with bits and bobs of left overs.

Fish cakes. Mash enough potato for your family. Add spring onions, can of tuna (or cheaper fish eg sardines mackerel) or 2, some fresh parsely, splash of lemon juice salt and pepper. Make into balls. Coat in beaten egg and breadcrumbs. Fry in a pan until golden flattening as you fry.
We have them with salad.

If you can find a Lidl near Christmas and get a pack of Speck (smoked ham) then have a go at making Tiroler Gröstl.

Also I'm going to give a plug for a basic chicken casserole in the slow cooker with a layer of small whole potatoes, carrots, small onions, celery, and herbs at the bottom. If you make plenty you can turn the leftovers into soup for lunch next day.

Bolognaise works well with mas instead of pasta
Any kind of baked potato
Fried potatoes make a nice breakfast
Potato scones
Frittata
Patatas bravas
Potato salad- I do mine with spring onion, carrot and red cabbage
Potato waffles
Make your own crisps?
Potato skins (either the thin skins or the deep filled ones with cheese and bacon or chives, but these takes ages to make!)
Potato soup
Put some in a veggie curry

Yes! I can't wait for it to get a bit colder so I can start making casseroles, so good for using everything up, tasty and healthy!

I make potato wedges quite a lot. Cut into wedge shapes, and toss in a bowl with garlic granules, onion granules/powder, salt, paprika, oregano (or mixed herbs) and olive oil. And then spread them evenly on a baking tray and cook on 200 degrees until soft in the centre and crispy on the outside (usually about half an hour, but will depend on how chunky the wedges are).
