What to do with masses of Blackberries (apart from jam)

Just that really. Loads of brambles out the back, there are tons of free blackberries. Any inspirations/recipes would be gratefully received!

Well there’s no better thing to make than jam IMO, but I also:

Freeze them in bags for later use
Make coulis and freeze it (so much reduced volume if you are short of space) and have it on ice cream or pavlova later
Blackberry and apple crumble or pie
Blackberry and elderberry cordial

Bordesleyhills · 19/08/2022 10:40

I prefer jelly to jam

ThePollutedShadesOfPemberley · 19/08/2022 10:41

Fruit leathers?

AmbushedByCake1 · 19/08/2022 10:42

Blackberry sorbet. Absolutely delicious

Pegsmum · 19/08/2022 10:42

Bramble gin, very easy to make (google BBC good food recipe) and makes great presents.

ShadowPuppets · 19/08/2022 10:43

Cook them with sausages and mash 😋

SpongeBobJudgeyPants · 19/08/2022 10:44

What Pegsmum said. I buy the cheap vodka, Sainsbos or wherever, and put it into smaller bottles when done. I also have a label stamp, to make my own labels. Sad but true! I also make rhubarb vodka, which is well received.

I freeze them whole and use them over winter in crumbles or as part of apple and blackberry pies. (I keep a bag of crumble mix frozen as well to make speedy deserts a possibility - it freezes very well and can be put in the oven from frozen, just add a couple of extra minutes baking time).

I use blackberries in smoothies when they are in season - I do a smoothie for breakfast with porridge oats, berries, almond butter, seeds, natural yoghurt and apple juice. Having blackberries as part of the mixed berries is lovely (I also love raspberries in it). You can also throw those in whole frozen, or sometimes I will just whizz up the berries if I have a glut and freeze the berry smush in ice cube trays (and pop out into ziploc bags once frozen) to use later. Great vit C content.

Blackberry and lemon cake with ground almonds

AluckyEllie · 19/08/2022 11:05

Bramble mousse! It’s the best (might be nostalgia speaking as my mum would make it every autumn.)

Creepymanonagoatfarm · 19/08/2022 11:06

Jus? Delicious with Kievs or just about anything!

Hanswurst · 19/08/2022 11:10

Some amazing ideas! I want to try all of them! Good idea about making jelly instead of jam, I don’t like the many pips in blackberry jam.
Will also do some freezing, sorbet, vodka, cordial, baking and try the mousse!
Thanks all!

Spread them out on a tray and freeze them. Once frozen you can put in a bag or box. Then you can use them in pies or crumbles throughout the year. Lucky you!

Leafy3 · 19/08/2022 11:39

Whereabouts are you please? Because I adore all of these things but have no time for blackberrying this year and I will happily take off your hands any of these you don't need!😊😉

Rapidtango · 19/08/2022 11:44

Picked a couple of kilos earlier in the week - froze and have been having a handful with muesli and yoghurt for breakfast.

Will make jelly and apple and blackberry crumbles, they are lovely incorporated into a plain sponge cake.

Also used in savoury dishes where you would use say, redcurrant jelly, cranberry etc.

Rapidtango · 19/08/2022 11:46

Oh, and autumn pudding (summer pudding but with autumn fruit - raspberries, blackberries, stewed plums....)

SlowingDownAndDown · 19/08/2022 12:44

Push through a sieve with the back of a ladle. Pour the juice over a peach or nectarine and have with cream or ice cream.
I like creme de mures. It involves wine and brandy if you’re interested.

Joolsin · 19/08/2022 12:48

I freeze them as pps have said, and have a handful on my breakfast every day. Usually manage to pick enough to keep me going from September through to Christmas. You have to freeze them on a tray spread out though, and only bag them when they've frozen, otherwise they'll be just a solid mass.

Selford · 19/08/2022 12:54

@SlowingDownAndDown do you have a recipe for Creme de Mure? I love it, but it's really expensive to buy.

RinklyRomaine · 19/08/2022 12:56

Another vote for jelly. I made 3 massive jars this week and it is so delicious without the pips. Chucked in a sorry looking pear and some plums and it's like autumn in a jar. Wish I'd made more!

SlowingDownAndDown · 19/08/2022 13:49

@Selford
it’s quite expensive to make too!
1.5lb sugar
1 bottle wine (750ml)
1.5lb blackberries
brandy

Mash the blackberries and soak them in the wine for 24 to 48 hours then mash them thoroughly and strain through a jelly bag. Add the sugar to the juice and simmer on a very low heat for a couple of hours until slightly syrupy. Cool and add one part brandy to three parts syrup (by volume). Cool and bottle. I like to use small bottles probably 250 mls.
The original recipe said red wine. I like to use white so you can see the colour. I suppose gin or vodka would be slightly cheaper than brandy. Hugh FW has a similar recipe on line somewhere using one or the other.

You can do the same with black currants or raspberries.

Selford · 19/08/2022 14:09

@SlowingDownAndDown thank you so much, I'll give it a go. I don't know if you've tried it in a Bramble cocktail www.delish.com/uk/cocktails-drinks/a30910699/bramble-cocktail/ - they're very moreish!

MintJulia · 19/08/2022 14:23

I bottle blackberries in syrup and we eat them all yeqr, with ice cream or pancakes, or in pies. 50 jam jars usually see us through the year.
I make blackberry yoghurt lollies - ideal for school holidays but you need lolly moulds.
Apple & blackberry pie, crumble etc.

blackberry crunch which is oatmeal, blackberries, and brown sugar, served with crepe fraiche.
