Thinking of collecting recipes/inspiration for slow cooker, air fryer, instant pot/crock pot or microwave cooking for the autumn winter.

Bonus - if prep is under 10 mins, and extra bonus if can be tailored to suit the taste buds of spice loving families!

We need to get into routine of putting things on in morning before work to come home to.

ONE RULE: No Oven!

Lovely veggie curry. Any curry is good for the slow cooker. Also use mine for chilli or stew but not much else so will be watching for inspiration!

Do joints cooks well in slow cooker or the instant pot? Say a joint of gammon in orange juice/coke/whatever liquid - or some other joint?

we do joints in air fryer splendidly with perfect crackling skin - but not possible on days where we are all tumbling out of the house on a dark winters morning at 0730 am and just want ready food to come home to. Whereas on a WFH day or weekend an air fryer roast is very doable.

so I suspect different recipes to suit different work days…

Gammon is lovely in the slow cooker, I do campfire stew. I'll try and find a recipe.

Slow cooker:
Curries always work well, especially lamb
Chilli con carne (cook rice on hob or microwave packets)
Casseroles and stews
Joint of ham, with air fried chips
Soups
Macaroni cheese can be done in the slow cooker
Pasta sauce such as tomato and basil
Fajitas

Air fryer:
We've done a lot of breaded chicken, chips, stuffed peppers/mushroom, roasted vegetables type dishes

Gammon in Cole in the slow cooker is beautiful. Literally just falls apart its so tender. Cherry coke adds a little something extra too. (I find tesco own brand cherry coke has the strongest flavouring in it)

A small ham, some dry cannelloni beans, garlic, chilli, onions, tin of tomatoes. Enough water to cover the beans.

Pressure cook 20mins, leave on keep warm till meal time. Break up the ham. Lovely baked beans with 5mins prep.

Mujadara
Caramelised onions (made in bulk ahead of time and kept in the freezer)
Green lentils
Cumin seeds
Garlic
rice
Stock cube.
Olive oil
Cover with water, pressure cook 0 mins. Keep warm til you eat

Again, 5mins if the caramelised onion is already done. I do a full pot at a time, and freeze portions.

Joints are great in the slow cooker. I just put some water or stock in the bottom to save them drying out. I’ve done gammon ham, roast chicken (stays pale but meat is delicious) and roast beef also

also I do pork steaks (with onions and stock and mushrooms), pork shoulder with a bottle of bbq sauce for pulled pork, meatballs with a jar of tomato pasta sauce, plus things like chicken goujons with fajita seasoning / other flavour seasonings for quick meals with wraps / rice etc

plus the usual chillis / curries / spag bol

looking for air fryer inspo though as we’ve only just got one of those

That's exactly my kind of thing. How long in a pressure cooker? You said 0 mins!

Yes, topcat. When it's up to pressure, that's enough. It will take maybe 5, 10 mins to depressurise by which time it's cooked. I rarely pressure cook for longer- just dried beans, big or frozen joints mainly.

I did dahl last night. 0mins in the pressure cooker.

Chopped onion, garlic, curry paste/powder, tomato purée into the pan to start to soften.

Chunks of sweet potato, red pepper.

A stock cube

250g red lentils, 600ml water, some frozen spinach blocks.

0 mins pressure cooker.

By the time it finished (natural pressure release) the sweet potato was actually too soft. I'll need to use bigger chunks next time.

Served with air fried halloumi.

I really like the Air Fryer Fajitas from the Ninja booklet. You can do all the prep, leave it in the fridge and then just put it in the air fryer for 20 mins (stirring once).

I've not done it with the potatoes yet though, I've just done the fajita bit.

Tonight’s dinner is gammon joint done in instant pot; cheap joint from atescos, onions, carrots and celery I base with 2 cups water, gammon on top and pressure cook for 1hr.

when cooked, take the gammon out, add split peas and more water, pressure cook for 20 mins and blend-ham and pea soup for lunch tomorrow

@ToppCat I checked my NPR yesterday. I made a chicken soup with 2 frozen chicken thighs and pearl barley. The pressure cooker was about half full.

It stayed at full pressure for 30 mins after a 0 min pressure cook. Everything cooked through.

Recipe if anyone is interested-
Stock from chicken carcasse.
Sweetcorn
Celery
Onion
Garlic
Ginger
Two sweet potatoes, inch cubes.
2 frozen boneless chicken thighs
Rosemary
Stock cube
Pearl barley.

0mins pressure cook on high. NPR. Checked all was cooked through, diced the meat and served.

If you like spice, then I’d recommend this veggie tagine (a lot of ingredients, but no browning required) and Thai duck curry.

My best autumnal microwave recipes are butternut risotto and jambalaya.

Definitely do the campfire stew recipe, it's amazing.

Question about red lentils - do they work in the slow cooker, ie for a daal, or am I better to just pressure cook them?
