Help! Cauliflower inspiration

I need to decide what to make for tomorrow's dinner.

I want to use a cauliflower. I'd prefer something in the slow cooker but not essential, a song as some of it can be prepped in advance during baby's naptime.

It needs to work for a DH that's not keen on pulses (so ideally no lentils/Chickpeas unless the end result is ultra delicious) and mild enough for a baby that has never had spice.

Usually I'd just make a curry but I only have spicy curry paste to hand.

I've started googling and confused myself even more, too many recipes and no idea what to make!

I don't know about slow cooker recipes but how about cauliflower cheese, cauliflower rice with meat/fish/curry, roasted whole cauliflower..

I'd roast it. If you have pizza oven I'd roast it in that.

This cauliflower korma recipe by Meera Sodha is delightful. The sauce and cauliflower are roasted separately and I’ve made it before where I’ve prepped the sauce the night before and reheated it and mixed with freshly roasted cauliflower. No chilli spice either, so should be fine for a baby, though it does have spices in it.

I had this once as a kinda biryani style with korma spices and coconut. Absolutely delicious.

Cauliflower cheese is lovely— lots of good recipes online — I add a teaspoon of prepared mustard or half teaspoon of dried mustard powder to the cheese sauce.

Cauliflower cashew soup. Simmer a bag of raw cashew nuts in about a litre of water with a spoonful of bouillon powder for 10 minutes. Add a cauliflower broken into florets plus stalk and leaves chopped up. Just cover with water. Simmer until cauliflower is soft. Blend (I use a stick blender in the saucepan).

That's it. Three ingredients, super easy, filling and even the biggest cauliflower skeptics like it. The amounts really are that vague. Depending on preference you just add more water after blending if you want it thinner.

I’m not getting the cauliflower hate.

Make a curry with it, aloo gobi.
My favourite thing to do is cover individual florets in batter and deep fry. Yum 🤤

Roast with olive oil, salt, pepper and smoked paprika (or pepper and paprika on half to suit baby) or purée with a big chunk of butter and/or cream or chicken stock. I love cauliflower!

Roast it. Or modify a bang bang cauliflower recipe and drop the spice levels. Then several it with noodles or rice. Failing that, blend it to a pulp and make soup,possibly with a strong cheese to hide the cauliflower whiff.

Put the florets in a bowl, drizzle with olive oil, add a good handful of breadcrumbs and a sprinkling of Parmesan, toss to mix then spread on a non-stick tray. Season and roast until golden and crispy.

@sleepygal feeds a family of four with salad with some over. Or serve as a side and it easily lasts two days. How is that excessive? It's really delicious.

Soup in the slow cooker # chop the cauli and any other veg - onion, potato whatever, just add boiling water and seasonings / stock cube / herbs.

Just use a stick blender to make it into soup when you are ready.

Cut it into 'steaks' season with spices and oil and bake in the oven.

Cauliflower cheese? I make it with bacon lardons.

Make it into 'rice' and serve with something else.

I'm so glad I asked thank you! I'm going to make Meera's curry today.

As soon as the weather cools down I will make the cashew nut and cauliflower soup, I think that may even be a winner with my toddler!

The bang bang cauliflower is also on the list to convert DH at some point.

I had seen and saved the Ottolenghi cake recipe before but as much as I would love to eat it, i never seem to be able to bake anything - doesn't rise, burns before it cooks through etc. I've now accepted its just not my forte!

One for another time. Break into florets. Blanch in boiling water, only for a couple of minutes, it still needs to be firm. Drain and allow to dry. Then dip in seasoned flour, egg and then a mix of wholemeal breadcrumbs and finely crumbled blue cheese. Place on baking sheet, spray with oil and bake.

I make aloo gobi but more dry.. My recipe is 2 tablespoons of oil in a nonstick pan, mustard seeds in first, throw small cauliflower florets in few minutes later add cubed potato and then add coriander powder, Garam masala, turmeric, chilli and salt some garlic ginger paste. Can add peas too. I always garnish with some coriander. Serve with chapatis and raita

I roast cauliflower with onion, mushroom and maybe potato with cumin, garlic and maybe paprika and then add leave in the bottom if the bowl and sesame sauce (from the orientalist shop) on top. Delish
