Easy chicken one- person recipes?

I'm a veggie with a carnivorous teen and I'd love to get him cooking his own stuff since veggie food really doesn't do it for him. I've never cooked with meat. Can anyone suggest some easy things he could do with chicken? He's a plain eater- likes Nandos.

Mine like a chicken & noodle dish they make themselves, cut chicken into strips, fry with some spices while noodles are cooking, add in some sliced peppers, mix, add soy sauce.

Chicken thighs ( bone in) are delicious roasted in the oven with lots of sea salt and black pepper. Serve with green veg and spuds. Super simple!

Is he interested in cooking? He could also try chicken breast sliced almost through so it leaves a 'hinge' - stuff with cream cheese - plain or maybe something like Boursin - and roll up in a rasher or two of good quality bacon or Parma ham, and roasted in oven. He could roast that with some cherry tomatoes and serve with greens.

Hunters chicken? Chicken breast wrapped in bacon. When cooked, top with cheddar (or a slice or Emmental cheese) and melt for a few mins. Then smother in warmed BBQ sauce 😊

I find Gousto recipes very tasty, straight forward, with little skill or equipment required. They have a 'cookbook' section on their website where you can browse their recipes without having to buy the boxes. This is chicken section, your son might find something there.

Buy a pack of either chicken breasts or chicken mini-fillets and a jar of Nandos sauce from the supermarket - marinade or sauce doesn't matter.

Put the chicken in an oven proof dish, pour over the sauce and stir around a bit so the chicken is coated. Put in the oven at 180 for 30 minutes (for breasts) or 20 minutes (for mini fillets). Half way through cooking take out of oven and turn each piece of chicken over.

That's it - incredibly easy.

Notes: the breasts can be done in 25 minutes and the fillets in 15 but this depends on your oven and their size so I went a little longer as you said you haven't cooked with meat. Check the chicken when it comes out of the oven - slice it in half and if the middle is white and stringy then it's cooked - pink and not stringy is not cooked (put back in for another 5 minutes). If it is a little dry reduce the cooking time slightly next time. The sauce will mostly disappear - this is fine - you aren't making a curry, this will give you the 'like Nandos at home' result.

This is easy to do and a great one to inspire kids to cook. If you use chicken thighs they are tastier but some kids don't like fat or bone so thighs can put them off.

Yep, here’s one that is incredibly similar.

Get a pack of chicken breasts or mini fillets and a jar of Indian curry paste or tandoori paste (I use Pataks Korma spice paste or Tandoori spice marinade (approx 300g jar)) and a small natural yoghurt (I use Yeo Valley Natural 150g).

Put half the jar of curry paste in a bowl and mix with the whole tub of yogurt so you get a light sauce.
Drop the chicken in and mix up until coated - you can put the bowl in the fridge for an hour for super flavour if you like.

Put the chicken into oven proof dish (discard the sauce left in the bowl) and cook the same as the Nandos recipe above.

It will char in the oven and that’s fine - the taste is great (light little char bits not burn is what you want!). Hint, drain off juices when you turn chicken so it cooks dry rather than boils in juice.

Serve with homemade yoghurt mint dip (chop up some cucumber into little chunks, add one 150g pot of natural yogurt and one teaspoon of mint sauce (the stuff we put on our roasts) - mix and enjoy with your chicken!

why is everyone recommending cooking chicken breasts in the oven? It's really not a tasty way to eat chicken, often dry by the time it is cook through and rarely any colour. Pan frying is just as easy but with superior results.

Similar, but for 'bruschetta chicken', season chicken and cook as above, then top with a little garlic butter, diced tomatoes, olives and chopped basil. Add sliced mozzarella and return to oven.

Also consider thigh fillets instead of chicken boobs. Tastier and cheaper!

Chicken fried rice - you can get recipes online but I just get a fried rice pouch from Tesco, fry off some chicken strips in sesame oil with a small squirt each of garlic and ginger paste, microwave the rice and add to the pan, give it a good stir, add a beaten egg and some peas (I usually put them in boiling water for couple of mins beforehand) then add soy sauce (as much as you want depends how you like it)

One of my DC's favourites is chicken breast, half a mug of chicken stock and whatever seasoning you like( Cajun,garlic, fajita, etc) wrapped up in foil and cooked in the oven.

Comforting chicken thigh bake
partialy cook rice.add in some peas and spring onions.
put in casserole dish
lay thighs on top push in a bit
pour over some stock to cover,
cook like a stew.

Chicken and roast vegetables - dead easy. Use ready-diced chicken. Brown in a frying pan. Put it in a roasting tin with your vegetables of choice (I like sweetcorn, aubergine, leek, sliced potatoes and some garlic cloves), season to taste, drizzle with olive oil and roast in the oven at 180 for about 45 minutes or until it looks done. Serve with soured cream either poured over, or as a dip, and any other pre-made sauces you like.
