Easy chicken one- person recipes?

I'm a veggie with a carnivorous teen and I'd love to get him cooking his own stuff since veggie food really doesn't do it for him. I've never cooked with meat. Can anyone suggest some easy things he could do with chicken? He's a plain eater- likes Nandos.
