Which you'd serve to friends coming round for the evening.

With a sauce you can prepare in advance.

And what else would you serve with it?

i quite like meatballs in tomato sauce but thats not terribly posh. server with salad. i imagine most posh pasta dishes go well with salad and nice bread.

Fresh pasta (pref tagliatelle), tub of tomato and mascapone sauce, smoked salmon, baby corn and mange tout.

Put sauce in a pan and heat gently. Put salmon in strips into sauce and stir, whilst cooking pasta. Veg in micro, add to sauce and serve over pasta!
Voila - it's lovely!!

No recipes but.. a very posh looking pasta is the wide flat one, can't remember what it's called but it's like tagliatelle only an inch wider. It just looks like one has been to a delicatessen rather than Tescos.

Can you do vongole ahead? Not sure about "keeping" seafood.

If I want to make pasta or salads look posh I put pinenuts in or on top.

Yes, vongole is the kind of thing I'm thinking - only I don't do molluscs. Just won't eat them. I'd want something without tomatoes, unless on teh vine on the side. That kind of thing [poncey emoticon]

Papardelle pasta? Is that the wide one? Or have I made that up?

just cannot remember the name of it..rafiella? zeffirelli? no idea -- plus peaches quite right roasted tomatoes on the vine are so posh-looking and zero effort.. bit of olive oil and basil.. forgot that one

mediterranean mozarella pasta bake (not posh, but goes down well with veggie friends)

I'd do papardelle pasta alfredo.

It's a Parmesan and cream sauce, takes minutes but tastes really nice.

i know a great salad too
roquefort cheese, walnuts, rocket and pears (and pine nuts unless you put them on the tomatoes ..I am a one trick pony)
the only thing you need to do "late" is peel and chop the pears
also feels very posh but is easy

Parpadelle is quite wide and flat. You could do it simply with basil leaves spinach, pinenuts, and garlic olive oil.

I don't know, it's hard to think of a posh pasta dish tbh. Actually I've got a recipe book written by an Italian woman and also JO's Italian book. I'll have a look in the there for you.

Sorry rereading your OP neither can be done in advance. I don't serve anything with them, we have a starter first, then pasta, then salad, then cheese and/or dessert.

River Cafe Conchiglie al pomodoro e porcini secchi - so fab and can be done earlier in the day.

fry garlic with fresh thyme leaves, parsley and chilli. Add rehydrated porcini mushrooms and cook for a few minutes. Add porcini liquid a little at a time; the mushrooms will soak it up.
Add lemon juice and 2 tins tomatoes. cook on low heat until thick sauce (30 mins). Add 120ml double cream and reduce by boiling briefly.
Add sauce to pasta and lots of parmesan.

Will put on rest of quantities if you like. Really tasty.
