what to make with lots of courgettes?

Any suggestions, apart from soup or ratatouille? I've got about 12 in the fridge.

ooh, live a courgette glut - send some to me Grin

  • grate them into anything you cook
  • use them instead of tomato in bolognaise type sauces
  • cut into disks, sprinkle with curry powder and grill them
  • if you have a good carrot cake recipe replace carrot with grated courgette
  • cut halfway lengthways, fill with sausage meat and bake
  • omlette with grated/small chunks

  • Spiralise them and use them as spaghetti
  • Use them to make courgette hash browns
  • Bread chunks, and fry them

Cut up and roast with red onion, pepper and tomatoes and mix with chicken in fajitas.
slice and roast/fry and use in moussaka instead of aubergine.
Can use in cakes I believe.
Really tasty sliced and fried in batter.

Courgette and cheese muffins are nice. Loads of recipes online.
Also grate into frittata or make mini ones in muffin tins- great for picnics.
Cut into strips and eat raw with a dip.

Frying pan lasagna.

Make a sauce by chopping onion, celery and carrot, tip in a tin of chopped tomatoes and season. Leave to simmer.

Break up and boil 5 sheets of lasagne. Drain and put to one side.

Chop up courgettes and fry, I use 2/3.

Mix in sauce, and lasagna and top with mozzarella.

Stick under the grill in the frying pan.

Slice lengthways, use tempura batter and deep fry, serve with lemon & garlic mayonnaise as a starter.

Slice into rounds, briefly fry in butter or oil, when cold, freeze. A good standby quick vegetable, especially good with fish.

Grate, use with onion, garlic and soup pasta, plus any stock for a quick summer soup.

We also chop or grate them raw into salad, kind of like cucumber....

My two go-tos, and I love courgettes so much I am growing 10 plants this year - are these:

Happiness Soup - better with yellow ones but still works well with any [Nigella Recipe - courgettes, lemon, rice and stock basically].

And Bread and Butter Pickles. Any time I get a little meh with them, I dont eat for 3 days, let them build up, wash and slice into 1/2 inch thick slices and salt them and use a Bread and Butter Pickle recipe for them. Then use them all winter when you need something a little spicy.

Or as.others have already said use in savoury muffins with cheese but I love to bake with them!

Courgette Provençal is a favourite of mine. Had a couple of home grown ones to use up and did it for lunch, although without the crusty topping in the oven. Make sure you let the mixture stick a bit to the bottom of the pan as it gives it a better flavour.

This is what I’d do if I had 12! Its really easy and actually tastes alright, while not being too stodgy. It freezes well too.

Oh I also griddle slices with olive oil and salt until very dark brown on both sides then use as a pizza topping with goats cheese. Tastes delicious and doesn't leave your pizza soggy because the water has all been cooked out.

Dice and stir fry in garlic butter until they are brown & crispy round the edges, but before they go soft.
