The chickens are producing a seriously impressive number of eggs and only one of our younger girls has gone broody. We have given them away, fed some to the pigs and STILL have dozens to get through. The kids refuse anything eggy unless cake or pancakes. I’ve eaten all the pancakes and omelettes and French toast I can handle! What else can I make please wise MNetters (my chef skills are poor, DH is better).

If you are struggling you can crack them, beat gently and freeze for later.

I love this recipe from Martha Stewart and you'll use 9 eggs! Just don't add as much salt as stated.

Egg Mayonnaise sandwiches - you need a lot of eggs to make it worthwhile

Scrambled eggs on toast, with smashed avocado on the side - yummy brunch, and again, you need at least 2 eggs per serving.

Sorry, just re read your OP and see that your kids don't like eggs... eeek.

Do you have a dog? Mine LOVES a hard boiled egg as a treat.

Peppers onions mushrooms and anything else - cooked and then add egg and bake.

Egg custard or even general custard!
Custard is cornflour milk and sugar made the same was a tinned custard then throw the egg in at the end sometimes call confectionary custard

Egg fried rice, bean sprouts, peas, sweet corn and rice mix with soy sauce and scramble.

Scotch eggs - nice when home make and can be baked.

Eggs and rice

	FOR THE THAI PASTE 
	2 large bunches fresh coriander , leaves picked and stalks reserved 
	2 thumb-sized pieces fresh ginger , peeled (or use from a jar)
	3 cloves garlic , peeled 
	2 fresh red chillies , halved and deseeded 
	2 teaspoons sesame oil 
	6 tablespoons soy sauce 
	2 limes , juice and zest of 
	400 ml light coconut milk 
	FOR THE EGGS AND RICE 
	400 g basmati rice (brown works well)
	freshly ground black pepper 
	7-8 eggs as many as fit in the roasting tray 
	1 handful edamame, frozen spinach blocks, sugar snap peas or mangetouts 

Method
1 Preheat the oven to 200ºC/400ºF/gas 6. In a food processor or liquidizer, whiz up the coriander stalks, half of the coriander leaves, the ginger, garlic, halved chillies, sesame oil, soy sauce, lime juice and zest and the coconut milk. This will give you a lovely fragrant Thai-style paste.
2 Cook your rice in salted, boiling water until it’s just undercooked, then drain it in a colander. Scoop it into a high-sided roasting tray. Pour your Thai paste and the green veg over the rice and mix it in well, then shake it out flat. Make dips in the surface of the rice with a mug or spoon and crack an egg into each dip, then cover the dish tightly with its lid or with tinfoil and put it in the preheated oven for around 15 minutes. Divide between your plates with a wedge of lime.

Cake! You can always freeze it if you can't eat it all.
Floating islands and Queen of puddings I think use custard (yolks) and meringue (whites).

Or make one eye sandwiches. Technically it's fried egg, but more "fun" so dc might eat them? Not very healthy though.

Spaghetti carbonara. 1 egg per person plus one for the pot.
Naples Lasagne has a layer of hard boiled eggs with quarters on top after cooking.
Victoria Sponge uses a lot of eggs IIRC.
I made meringues for strawberries and ice cream yesterday. I was a bit short on time so they were like marshmallows inside. Yum.
You could bake them for longer and they would keep well in an airtight container.
Or make Eton Mess, Pavlova, Baked Alaska.
I put the extra yolks into filo spinach pie.

Would they eat a wrap type thing? My description are useless but I'll try!
2-3 eggs, make a thin omelette. While still slightly runny on top, add a wrap to the top and flip it over so wrap is on the bottom of the pan
Sprinkle some cheese on, add bacon/ham/ketchup whatever you want and then fold and flip until cheese melts and wrap is toasted
Basically omelette in a wrap but it's tasty and filling

My uncle leaves out hard boiled (and peeled) eggs for the local foxes. They love them!

He used to just leave the raw eggs, until the neighbours complained about the egg shells they would leave in their gardens.

Another idea, do you have a local Facebook Share group? Or even just take some down to the local pub?

I personally would be making custard, hollandaise sauce and Delia Smiths chocolate roulade.

Chocolate mousse where the yolks go with the chocolate and the whites make the foam, so there aren’t any leftovers.
Same for tiramisù but it might be too eggy (and rich!) for the children.

That’s the problem, isn’t it? So many egg dishes are combined with rich ingredients it could be harmful to your waistline. I would put a notice on the gate “Fresh eggs for sale” especially as Waitrose was selling 6 ordinary eggs for £4 on another MN thread.

I make oven omelette things. Peppers, notions michrooms fried up. Often cook some hash browns and chop up. Divide up into silicon cupcake cases and then pop with some chopped chorizo and grated cheese. Bake in the oven until brown on top.

They freeze ok to so I put away for midweek breakfasts.
