The chickens are producing a seriously impressive number of eggs and only one of our younger girls has gone broody. We have given them away, fed some to the pigs and STILL have dozens to get through. The kids refuse anything eggy unless cake or pancakes. I’ve eaten all the pancakes and omelettes and French toast I can handle! What else can I make please wise MNetters (my chef skills are poor, DH is better).

What about a soufflé?
Egg custard or Creme brulee (use the whites to make meringue)
Quiche - so many types
Fresh mayo
Hollandaise

If you don't wash them then they last in the fridge about 3 months.

Are there any food banks or community larders that would like them?

You can freeze eggs. crack them into a suitable container , perhaps enough in each for an omelette or similar.
There is going to be a shortage next year due to increased grain prices (or they will be very expensive.

Pickle them?

Donate to a food bank / soup kitchen / community shop.

Make pancakes and freeze.

Do you have kids at school? Most schools are fundraising maybe you could donate for parents to buy to raise funds.

Eats well cold in lunchboxes etc and doest have to be all courgette. I have used a mixes of potato, more onion, sliced peppers, mushrooms. Have also left out bacon and added olives and walnut. Sells really well at cake stalls too.

Frittata - great for using up bits from the fridge too - we use deli meat.
Egg fried rice.
Fried egg & thinly sliced & fried chorizo in a wrap.

The Salvation Army take Mums excess eggs from her, and serve them in meals at the shelter.

Mayo, hollandaise or custard with the yolks.
Meringues or macarons with the whites.

Use the whites to make pavlova.
Add yolks to mashed potatoes and beat in well, makes them really rich

Make a quiche filling (eggs, milk, grated cheese and whatever else fancied) but instead of putting it in pastry add breadcrumbs (I used to freeze the wholemeal crusts that nobody ate and grate 1-2 whilst frozen as no food processor) pour in greased pie dish and pop in oven. Good hot or cold, I used it for finger foods for babies or can use cold for lunchboxes. Wish it was a problem I still had but my old girls are long gone🐔🐣😕
Oh and scotch pancakes are easy, kids used to like those warm for breakfast with honey, just use self raising flour instead of the plain you would use for normal pancakes and a little less milk😋

You can salt them. Keeps forever after that. Salted egg yolks are stuff that dreams are made of!
