I live on my own and at the moment have trouble sleeping, therefore often spend the entire day shattered and can't be bothered to do anything. Today I have felt on the verge of falling asleep all day, so the thought of cooking has not appealed. Instead I've just eaten a bowl of cereal for lunch and the same for dinner. Whilst this isn't the most unhealthy option, I know that eating healthier would be better for me, so what are your go-to having a lazy day meals? Preferably low/no carb (I know cereal doesn't fit into this) but any quick and easy things you do.
My other go to is cheese with slices of apple and a bit of chutney 😋

Cheese omelette with different stuffings depending on what is in the fridge: mushroom, spinach, peppers etc. Low carb and 1 or 2 or even 3 of your 5 a day.

Poached eggs. I can’t have the without toast but you could have ham with them.

slow cooker is your friend - I’m terrible when I get in from work. If it isn’t in front of me I will eat crap. If I use the slow cooker I eat healthily.

I usually pan fry some onions, pepper, mushrooms, celery, spinach and courgette and then add 3 beaten eggs. Then top with a mountain of grated cheese (gruyere is epic) and finish under the grill. Takes less than 5 minutes and is really simple/healthy.

I'm diabetic so ready meals are never an option.

Depends how 'no cook' you mean - some of my faves are things where I can lob everything into the oven or a pan and ignore it for 20 minutes.

Scrambled eggs or an omelette.
Jacket potato with cheese.
Heinz chicken noodle soup (good store cupboard standby).
Couscous with some dried fruit, chopped veg and Moroccan spices.
Chopped peppers, onion, cherry tomatoes and mushrooms roasted in a tray with little bits of chopped bacon.
Fishfinger sandwich.

Every now and then I also try to do some freezer meals - hidden veg pasta sauce, riboletto, beef curry.

julienne onions, peppers, courgette and fry in sesame oil in wok, add pepper and chili. Soak 3 minute noodles in boiling water for 3 mins, strain and tip into wok. add soy sauce, turn onto a plate once soy soaked up by noodles [30 seconds] and add a dollop of mayo and eat.

Thank you for all your suggestions. I am usually quite good at batch cooking but when I'm this shattered, even reheating one of my frozen things feels like too much effort. Quick frying though I can do!

@Dailyfailcanfeckoff I would love to have eggs and toast, but if I have bread in the house I will live off it until it's gone. Bread is my kryptonite unfortunately, so while I am having things looked into for the sleep issues, I am very inactive but know I need to lose weight as that will help with various issues. Living off toast and sandwiches sadly won't help me lose any weigh so I have to just avoid bread for now. I miss fried eggs on toast! Damn my lack of willpower 🙂

Spagetti. Once cooked stir in one spoon of philadelphia, one whisked egg and handful of grated cheese. Plenty of black pepper.

I'd say it's time to book a GP appt as this cannot be good for you.

Fish - something precooked like a salmon fillet, mackerel or tinned fish
Rice (pouch that goes in microwave)
Green veg - maybe one of these - spinach/peas/broadbeans
Ready in ten mins

I used to do two of those large flat mushrooms (fried or grilled) spinach and then either a fried egg or poached egg on top of each. Sometimes I would also add avocado - yummy and quick

Bachelors pasta n sauce, throw in extra chopped mushrooms, cooked garden peas and grated cheddar, when served add even more cheddar on top.

Takes five minutes to cook.

I buy a really nice marinaded chicken (Waitrose do a chicken leg in barahat with date butter) and stick it in the oven then add it to a bowl of salad (the pre-made ones) with some mayo or dressing. Easy and tasty.

Greek salad

Whole mozzarella with ham and tomatoes

Cheese, pickles, nuts, cut up apple

Some kind of omelette for me, pasta is also very quick especially fresh egg based pasta you keep in in the fridge but not low carb
boiled eggs boiled veg cheese and some kind of salami

Please look after yourself I don’t want to worry you but the increase in inflammatory bowel disease mainly due to the dietary element of this, (poor western diets) is really a significant issue!

I say this but I am so bad too long hours at work and on my feet all day running

I buy those sachets of microwave rice. On a lazy day I stick a breaded chicken fillet in the oven, a pouch of rice in the microwave (or do a pan of rice if there’s a few of us eating) and then do a bag of salad on the side. With some hoi sin or katsu sauce on the chicken it feels like an indulgent dinner with literally no effort.

Tuna and bean salad
Tin of tuna in olive oil, jar or tin of cannellini beans or similar (jars are best). Chick peas are also fine.
Flake the tuna into a bowl with its oil. Drain the beans and tip them into the bowl. Add finely chopped spring onions, capers if you like them, black olives, ditto, and chopped parsley.
Mix it all together gently, add more olive oil if it seems dry and either the juice of half a lemon, or a similar amount of white wine vinegar . Season.
I'd serve this with a tomato and basil salad. It's very useful in hot weather when you can't face cooking anything hot. You can also add diced cucumber, peppers or any other salad vegetables you like.

Tinned beans and sausages on toast
Pesto with red pasta and bacon/mushrooms/onion
Pizza and coleslaw. Homemade pizza made with bagel or naan bread is nice.
Toasted cheese and ham wrap with some cherry tomatoes.

Good quality hummus, olives, feta, cucumber, tomato and stuffed vine leaves (if I can get them). A crusty bread roll and a glass of wine are my perfect side dishes.

I always cook extra veg when I do cook so I've always got some in the fridge ready to add to meals on days I don't have a lot of time. Even if all you can be bothered to make is super noodles, adding veg makes it seem less like student food.
