Broccoli stalk?

Does anyone use the whole broccoli including the stalk? I tend to chop the florettes off and throw away the stalk but wonder if it could be used? I mean clearly it's edible if it's cooked but it doesn't look like it would be very nice or have much nutrition?

Raw dipped in mustard Mayo

It's the best bit!

I agree with others - absolutely lovely raw - I also much away as I am chopping up the florets. Yum!

Slice thinly or dice to use in stir fry or soup.
Dice to use in any vegetable casserole, or tagine.
Dice and cook with carrots & onions and Puy lentils to go with sausages or ham.
Dice finely to add to cous-cous.

I prefer the stalks! Tastes like asparagus (use your imagination!).

Loopytiles · 06/05/2022 17:17

I eat it raw, tasty!

I use all the cauliflower leaves too. Sliced and stir fried. Or lightly cooked as you would with cabbage. I can't understand why people waste so much food.

I only eat the stalk! Hate broccoli florets, weird mushy things that are overcooked in seconds. However the stalk is delicious.

DD is the same.

We use the stalks unless they are really woody and tough.

It's the best bit. A huge one (chopped up) is going into a chicken and veg curry tonight. I also roast it, add to risottos and stir fries, and add it raw to coleslaw and salads.

Oh, that's interesting. Do you use the white bit as well?

My rabbits are rather partial to broccoli stalks..

I used to work in a fairly fine dining restaurant. We chopped up the stalks into sticks and included in the veg mix. One pretentious dinner refused to believe me when I said it was broccoli. He actually scoffed.

I always just use it chopped along with whatever the broccoli heads are doing. Very interested to try it in coleslaw.

Neverendingmindfuck · 06/05/2022 18:59

We eat it here too. Usually steamed with the rest of the veg.
(I didn't think dogs could have broccoli 🤷🏻‍♀️) ....

Thanks all I had no idea!
All these years I've just been throwing it away! Am I the only one?

It’s great. Sliced in stir fries is my favourite, it is better than the florettes there imo

Libertaire · 06/05/2022 19:03

I always eat the stalk. Raw, chopped into sticks and dipped in houmous. Delicious!

Irridescantshimmmer · 06/05/2022 19:43

I always use the brocolli stalks, tastes just as good as the florets😀

LadyMonicaBaddingham · 06/05/2022 19:46

I peel it and slice it thinly to eat as a cook's treat nibble before the meal. Mu Mummy does the same; it is highly sought after in my family, along with cauliflower stalk.

No, me too! What a great thread. And if it's tastes anything like asparagus then I'll love it.

starlingdarling · 06/05/2022 20:15

I peel and slice it thinly for things like stir fry. It also works well peeled and sliced for eating raw with a heavy sprinkle of salt (a trick I picked up in the Middle East).

liveforsummer · 07/05/2022 09:37

It's delicious, nicer then the florets imo. I cut the very end bit off that's been exposed then just chop in to 'trees' so you have the contrasting textures in every piece. I can't see how it works have any less nutrition
