Your favourite vegetarian curries that you make at home?

I've got a couple that I make regularly but am looking for a change.

I'm a huge lover of Meera Sodha. I have all three of her books - the second two are exclusively vegetarian. Monica Haldar at the Spice Diary is also excellent, and many recipes are freely available. Her paneer tikka skewers are totally delicious. I don't really venture outside of these online. There are a lot of bad curry recipes around and both Meera and Monica have a huge number of recipes that vary in flavour profile and style that I don't feel I need to. Just from the top of my head, here are some recipes which I've made, enjoyed and are available online.

Cauliflower Korma - Meera Sodha
This is lovely, the cauliflower gets a bit sweet as it bakes and the sauce is lovely and rich

Tadka Dal - Monica Haldar
One of my favourite dal recipes. It's tasty, simple and reliable.

Palak Paneer - Monica Haldar
Fresh and simple. It's quite dry so works well with bread.

Cauliflower, Cashew Pea and Coconut Curry - Meera Sodha
Link is behind a paywall, but it's in Made in India as well. I've made this for group meals in holiday cottages before and it's a crowdpleaser.

Pumpkin Malai Curry - Meera Sodha
This is so incredibly rich and thick, and the sweet pumpkin with it works so well. It feels like a real treat.

Coriander Chutney
Finally, not a curry, but quite possibly the most incredible food in existence. Bright, spicy, salty, tangy and works well with most foods.

Satay sweet potato curry is a favourite in our house. I use the BBC Good Food recipe and it’s always a winner.
Black bean curry is another good one. For that, I use recipe.
Lastly, I use aubergine and chickpea curry recipe when we feel like Thai.

There’s a butter paneer recipe in Fresh India which is really easy and as good as anything I’ve ever had in a restaurant.

Yes, that recipe is wonderful! It’s here on the Guardian for reference.

If buying paneer I’d recommend the Everest brand (Morrisons and Waitrose) rather than the Apetina one from Sainsburys. I found the Sainsburys one too soft and crumbled in too much when I used it. Still delicious though!

I agree, the Everest brand is far superior. Ocado sell it too.

And paneer can be frozen, either 'raw' or fried

I think I need to try some new curries.

My favourite combination is chana dal and bombay potatoes, both from Madhur Jaffrey's 'Indian Cookery' book.

My fave veggie curry at the moment is this Keralan veggie curry. I could eat the lot 😊

This is a beautiful curry. Really creamy. I also add in some extra spices rather than just the curry powder.

I tend to use either Meera Sodha’s or Chetna Makan’s recipes, easy to follow and always delicious. Last night I made red kidney bean curry from Made in India, really quick to make but very tasty.

The above recipes sound amazing.

Adding to the chorus of Meera Sodha lovers, her recipes are just incredible, I highly recommend any of her books to vegetarians who love Asian food. I also had a lot of success with Monica Haldar, Chetna Makan, and Dishoom recipes - between those four I don't really look much further for Indian cookery.

Winter Pilau with Beetroot, Cauliflower and Coriander Chutney
Full of vegetables and flavour, a real comfort dish.

Tandoori Broccoli
From East, but not online. A perfect classic tandoori recipe

Roasted Jerusalem Artichoke and Chickpea Chaat
From East, but not online. Absolutely delicious, full of flavours, textures.

The Nigella sweet potato and butternut squash curry is absolutely beautiful. But leave out the veg stock and fry off the spice paste in an oven proof dish then stick the whole lot
in the oven for an hour. My go to comfort food dish

Too many curries depend on tinned tomatoes for my liking.

I've got East but still haven't cooked anything from it. In Fresh India there's a channa recipe with coconut that's delicious and so easy to make. Will try to find it online.

Can't find it, but if you've got the book I highly recommend. It's the one with channa and desiccated coconut.

Hello. Sorry for jumping on your thread but I'm looking for a good vegetarian Indian dishes / curry dishes cookbook and this thread popped up in search.

I've seen Meera Sodhal mentioned a lot. Can anyone give me an idea which of the 3 books is the best?

@MerlinsButler all are good and it depends what you are looking for.

Made in India - meat, fish, vegetarian. All Indian. Fantastic all-arounder. I would recommend this to someone who loves Indian food and does eat meat (though there is still a lot for veggies in this book, it wouldn't be my first recommendation for them).

Fresh India - all vegetarian. All Indian. This is the one I use the least, but am not vegetarian myself, I think I would choose this above Made in India if I was. That being said it is excellent and I have gotten on well with the recipes here, I think it has a lighter, vibrant, fresher feel. If you are a vegetarian looking for Indian specifically, this is the one.

East - all vegetarian. Pan-Asian. Idea is not to create authentic dishes, but takes inspiration from across the whole Asian continent and creates really tasty dishes. I adore this book, all the recipes I have tried have been great. I would recommend this above Fresh India, unless you only wanted Indian in which case there might be a lot here not for you.

I think on Amazons website most books you can look at the first 20 pages for free, you could look at the contents of each and decide based on which feels best to you.

I have all three and use them often. If you are after purely Indian food then I'd go for either Made in India or Fresh India. I love East, but recipes are from across India and east Asia.

Made in India isn't exclusively vegetarian but there are still some fantastic vegetarian recipes there. Fresh India (as the name suggests) is focused on Indian cooking and is exclusively vegetarian, so probably best for you. Amazon often let you browse the first few pages of a book, so maybe that might help as well.
