I have to ask - Coronation Chicken

I've heard this referenced many times in many places, but never actually eaten or made it. Have to say it does sound tasty. Or like a train crash of a dish, depending on my mood.

If anyone still eats this regularly may I have your recipe please?

It’s actually lush if you like chicken, curry flavour and mayonnaise!

I literally use curry power (mild or medium), mayonnaise, few sultanas, salt / pepper, squeeze or lemon juice (not essential) and add cold chicken. I’ve cooked chicken in curry power too, adds a bit more flavour.

It’s amazing on a jacket potato or thick white bread 🤤🤤

It's so easy and actually really tasty! Chuck some mayo, curry powder, mango chutney and sultanas in and that's it. No idea of amounts as I just do it by taste but start with a teaspoon of curry powder, couple of spoons of mango chutney and a squirt of mayo and adjust as needed. Works well with cooked Quorn chunks too for a vegetarian version.

I add some toasted almonds or cashew nuts to mine too for a bit of a different texture. If I have crème fraiche in then I do a mixture of that and mayo, rather than just full mayo. Geeta’s mango chutney is the best brand you can get from the shop (in my humble opinion!) so get some of that if you can Smile

Waitrose do a coronation chicken sandwich, think M&S might too if you can't be bothered making it and want to try.
My favourite!!

You don't have to add fruit if you don't fancy it. I do like sultanas in mine but I don't like it overly sweet so I only put a tiny amount of mango chutney in.

It completely depends on the recipe and who’s making it. I will only eat my mums (which is a Mary berry or Sophie grigson recipe.)

Love Coronation chicken! I’m sure I’ve had it with apricots. Agree about Geetas mango chutney - I think I got some in Waitrose.

Just leave the sultanas out, it won't detract from the flavour!

I make amazing coronation churn if I do say so myself 🤣🤣 roast a chicken and then when it’s still warm pick it all apart and put a big table spoon of apricot jam on it and mix it in (as it’s still warm it’ll melt the jam slightly), I then use half homepride curry sauce and half mayo to make the sauce - can add more mayo/curry depending on how you like it) and mix with the chicken. Absolutely delicious!!!

I make it without sultanas and the mango chutney just seems right.
I use a mix of mayo and crime fraiche with curry powder and mango chutney
M&S do a nice one bit I have to pick the sultanas out

Our neighbor is a retired chef and makes the most delicious coronation chicken I have ever tasted. No sultanas, she says they are not part of the classic recipe.

I love it! Pret used to do a gorgeous sandwich but stopped years ago sadly. My local (independent) bakers also does a good one, I’d look out for it in cafes & bakers. Good on a jacket spud too.

Mine is nowhere near authentic but delicious none the less. Like the Op I’m not a massive fan of dried fruit so sub sultanas for chopped grapes. I also add finely chopped red onion and celery for added crunch.

I keep meaning to try the original recipe:

cooked chicken
dried apricots
mayonnaise
crème fraîche
olive oil
curry powder
white onion (or shallot)
red wine
bay leaf
lemon juice
a pinch of sugar
salt & pepper

@CurryLover55 I’ve been able to get it from Sainsburys and Waitrose online and also in my local (fairly large) branches of those two shops. It’s so much nicer than Sharwoods or any other brands.
