I have to ask - Coronation Chicken

I've heard this referenced many times in many places, but never actually eaten or made it. Have to say it does sound tasty. Or like a train crash of a dish, depending on my mood.

If anyone still eats this regularly may I have your recipe please?

It's one of my favourites and I'd eat it more often if it wasn't so calorific! I make mine with a big tablespoon of korma paste rather than powder, then the usual mayonnaise mango chutney and a squeeze of lemon juice. I add chopped up grapes rather than sultanas (though I like them too) I love it on top of brown soda bread. It is the food of the Gods Smile

Ok, I'll buy a jar of mango chutney (which I will use for NOTHING else) so I can give this a try. No dried fruit but celery for crunch sounds good.

If you want to do a lower calorie version, you can use plain, non-fat yogurt in place of most of the mayonnaise. It’s not the same dish, but if you have a craving it can sometimes satisfy it without the calories.

I've only had this very recently (in my late 40s!) after my DH badgered me insisting it was lovely. I had the exact same thoughts as you and couldn't decide whether it sounded lovely or disgusting so had put off trying it my entire life.

My DH was right! It is bloody LOVELY!!! Definitely try it. You've no time to waste 😬You've just reminded me if how lovely it us with this thread so may have it for my lunch tomorrow!

I like to sub in Greek yoghurt for some of the mayonnaise (makes it a little more tangy) but otherwise agree with PP you can't go wrong with curry powder, mango chutney and sultanas! Have some leftover chicken for lunch tomorrow - this has inspired me to make coronation chicken now. Grin

I love Coronation Chicken ! I do it often. I used roasted children sliced small then add 5 heaped table spoons of low fat mayonnaise. Then add a tablespoon of apricot jam and two teaspoons of mild curry powder. Mix together then add a handful of sultanas. Delicious 😋

I use curry paste in mine with mango chutney, I find curry powder tastes a bit powdery and uncooked to me. Just keep tasting until you have the quantities right for you. I never use dried fruit.

I love it but make it with half greek yoghurt and half mayo and no sultanas. I usually have a couple of tablespoons over lettuce and cucumber so it isn't quite such a calorific diet spoiler.

I make mine with sultanas and apricots , with some flaked almonds scattered over. I like it with bitter salad leaves as a quick lunch.
I think it would go well with cous-cous salad too, perhaps with diced cucumber and tomato folded into the cous-cous. Raita would be nice with it also.

You can use apricot jam. I used to make it years ago and everyone loved it. I can’t remember the exact recipe but it started with frying an onion and curry powder, adding apricot jam and then when cool folding in a mixture of mayonnaise and creme fraiche. No sultanas.

On bbc good good there's also a prawn coronation with chickpeas on naan bread. Obviously this is not quite the same thing but I love that too!

I some times make a portion for myself if i have leftover chicken curry. I fish out the chicken chunks with a bit if sauce and mix in some (Geetas) Mango chutney and mayo, a bit if6 fresh coriander is nice too. Best leftover treat ever IMO.

Yes it was originally by Constance Spry and Rosemary Hulme.

Poach 2 young chickens in water and a little wine, carrot, bouquet garni.

Cream of curry sauce

Cook oniion, curry powder, tomato puree, red wine, water, bay leaf, lemon and lemon juice. Simmer.

Cool and add apricot puree, 1/2 pint mayo and 2 to 3tbsp lightly whipped cream.

This is an admirable sauce to serve with iced lobster.

OMG HOW HAVE I MISSED OUT ON THIS FOR 47 YEARS????????

It was serendipity the other day when I realized the whole chicken in the fridge had to be cooked asap. DH was on his way to the supermarket and I asked him to pick up a small jar of mango chutney. He was perplexed but obeyed.

The rest is history. I initially used only half the cooked chicken (as instructed- mayo, curry powder, chutney, celery, salt & pepper) and we freaking devoured it. Obviously the other half had to be sacrificed at this point.

DH wants it for lunch 3 times a week now. Am genuinely stunned and impressed!

I should've said- I'm in Australia, or else I would have! You don't see CC here much if at all. I just read a lot of English novels.

My Dad still uses banana in a hot curry! Apparently it sweetens and thickens, I'll take yours/his word for it.
