What’s your best use of over ripe, squishy nanas?

I would usually make a cake…

Yup, banana bread or banana muffins. I often freeze them when I'm not in the mood to cook or on a diet

Invasionofthegutsnatchers · 09/01/2022 12:07

Smoothie or milkshakes

loopylindi · 09/01/2022 12:08

banana ice cream. Blended nanas, whipped cream, spoonful icing sugar. Mix together, freeze partially, stir, continue freezing. Job done

Food dehydrator, I used to get massive carrier bags of over ripe bananas for 50p from a fruit and veg shop near me, saved him hoying them out. Dried in the dehydrator made lush chewy sweet strips.

Mary berry banana loaf is very delicious

and you'll most probably have all the ingredients at home if you bake

breakfast smoothy with oats

BruceBogtrottersWife · 09/01/2022 12:38

I made these when I had the same issue. They were divine! www.lifeloveandsugar.com/moist-chewy-banana-oatmeal-cookies/

hivemindneeded · 09/01/2022 12:39

banana bread!

Or banana and raspberry porridge

Wotagain · 09/01/2022 12:44

Peel them, cut into a few chunks then wrap in cling film and store them in the freezer ready for when you fancy baking something. I like Mary Berry’s carrot cake recipe that uses 2 ripe bananas.

Wotagain · 09/01/2022 12:46

And obviously when chopped and frozen they are perfect for a quick, chilled smoothie

Fivemoreminutes1 · 09/01/2022 12:49

Flapjacks, curry or frozen yogurt.

Wotagain · 09/01/2022 12:52

You can also bake bananas. Peel and place in an oven proof dish, sprinkle with a bit f brown sugar, some cinnamon or nutmeg, zest of an orange, its juice,, splash of rum if you’ve got any, and a handful of raisins. Bake at about 150 for about 10 mins.
I’ve not made these for ages so timings are a bit of a guesstimate but just keep an eye on them until the look nice and sticky. They are good with vanilla ice cream or plain Greek yougurt

SeaToSki · 09/01/2022 12:54

Peel, freeze, use in smoothies

nuggetschicken · 09/01/2022 12:57

Banana muffins with chocolate chips. I could eat the whole batch when I make them, they're so good.

Unsuremover · 09/01/2022 12:58

Banana ice cream. Peel them freeze them hard and blend. Chefs kiss!

Effic · 09/01/2022 12:59

I do a similar version of Wotagain but with dark chocolate

Place banana is foil package, add dash of rum, cinnamon & raisins and push some small squares of dark chocolate along the length. Loosely fold foil above the banana leaving room over the top.
Bake low heat for about 15 minutes

Serve with dollop of vanilla ice cream

PurpleDaisies · 09/01/2022 13:01

Pancakes and freeze them.

I've just made muffins with four black ones going off in my bowl...

Mash 3/4 ripe bananas, mix in with one beaten egg. Add 150g caster sugar, 300g self rising flour, two spoons of butter and a splash of milk. Mix together but only just - leave it lumpy - then in the oven at 180 degrees in muffin cases for 17th a or so.

Much nicer than the bananas looked!

BunnyRuddington · 09/01/2022 15:23

I've got done too and was thinking of baking these banana cakes with chocolate chips Smile

Beecham · 09/01/2022 15:26

I do banana and oat breakfast muffins, for the kids when they're sick of cereal.

3 overripe bananas needed per batch.

CMOTDibbler · 09/01/2022 15:29

I chop them and then freeze in bags of two bananas then they can be pulled out and used in smoothies, baking, porridge etc

I also make those. In fact that is on my to do list for tomorrow!

Great for breakfast or for snack time at school.

ElephantInPrint · 09/01/2022 17:27

Ice cream. I mixed some through some leftover whipped double cream and added some peanut butter.

violetbunny · 09/01/2022 19:20

Banana chocolate chip muffins, the best muffin flavour ever. I've made this recipe more times than I can count!

I just freeze them whole in their skins. I use them in baking. You only have to run the frozen banana under warm water and the peel slips off.
