What’s your best use of over ripe, squishy nanas?

I do banana and oat breakfast muffins, for the kids when they're sick of cereal.

3 overripe bananas needed per batch.

Healthy pancakes...

Per person:
1 banana, mushed
2 eggs
Handful blueberries

Mix banana and eggs with fork.
Heat blob of butter on nonstick frying pan.
Pour into pan, sprinkle blueberries on top. Fry a couple minutes medium heat. Flip over (cutting it in half helps). Cook other side.
Serve with honey/yogurt/fruit/nuts etc.
Important to eat hot, so not good for feeding lots of people.
Blueberries not necessary but they are really good!

I was going to say banana pancakes too - I used up some bananas recently and really enjoyed the pancakes. I didn't add berries - but served with a blob of yoghurt and a few grapes cut in half.

Freeze them and add them to overnight oats.
