I have a lot of meals to produce over Christmas so I've bought some cheaper cuts of meat to help me keep within budget.

What are your favourite recipes for things like beef brisket and silverside?

I'm thinking of doing this Hugh Fearnley whittingstall bresaola

Chicken thighs/drumsticks, bone in, skin on in slow cooker with onions, garlic, carrots, sweet potato, mushrooms, courgettes. Make a stock of 1 mug boiling water, herbs (thyme, rosemary, whatever mix you have dried), worstershire sauce, balsamic vinegar, salt pepper. Gorgeous as stew or blended as soup (more water may be needed if the soup is too thick).

Pork belly or shoulder, laid out flat in a deep sided dish, tuck some onion quarters, garlic, bay leaves, peppercorns and slices to lemon zest (peel it off the lemon with a vegetable peeler) and whatever woody herb (rosemary or thyme work well) you have. Cover with whole milk, and slow cook in the oven for 4-5 hours. The milk seperates, and it looks pretty ugly, but it tastes amazing.

Most joints if meat are gonna taste good slow roasted with some onions, herbs and wine.

Pulled pork is cost efficient when cooking for a family/crowd. I do mine in the slow cooker which is fab too. I serve with flatbread, lettuce and extra bbq sauce

I cook brisket with onions, garlic, tomato puree and beef stock. A low heat about 125c for about five hours and it's delicious.

I use my slow cooker for cheaper cuts - but a low oven heat would also work.
Brisket - browned first - can be pot-roasted over a bed of veg - onions, carrot, celery etc.
Make gravy with the mashed veg, slice meat & I prefer it to a prime cut beef roast.

Beef carbonnade is gorgeous in winter - try the Great British Chefs recipe. I usually use brisket for that

Boil the brisket with swede, potatoes, leeks and any other veg you have lying around.
Serve as broth with crusty bread

The cheaper cuts take longer to cook but taste so much better. I love shoulder of lamb or pork, far better than leg.

Leave the lid on, then just take it off for half an hour at the end to get a bit of colour (you will not get any sort of crackling so if your joint has rind, then remove it before cooking and crackle seperately). It is an Italian recipe and I am sure I got it from either a Nigella Lawson or Jamie Oliver book years ago.

I was actually thinking about this, lamb recipe www.bbcgoodfood.com/recipes/vietnamese-lamb-shanks-sweet-potatoes today. I think you could up the stock and do it with a leg of lamb.

Oh, another cheap and cheerful that is requested here very often is a lazy tartiflette type dish. I slice the potatoes, simmer in stock and when they are softening, bung in some cream and cheese then into the oven. If we have left over cold meat, that goes on the side or else just veg. It's lovely the next day too so good if you make a big one and like left overs.

There's nothing outlandish or novel about this recipe but it is good, it always works and it tastes great. The recipe calls for shanks, and I've done it with these, but it also works with mini shoulder joints.

I also love doing a version of Hoppin' John which uses Ham Hock or Ham Knuckle - pretty sure it's not completely authentic but we like it. It's traditional to have it on New Years Day (pic attached). Unfortunately it's only in a recipe book but you can find other versions online.
