Easy veggie meals for two

We've decided we need to simplify our meals on a week night, especially now there's only two of us and we're both working full time.

So far we have:
mushrooms on toast
jacket potatoes and salad/cheese
veggie sausage, mash and frozen peas
oven chips, veggie pies and frozen veg
Higgidy quiche and salad or vege
pasta pesto with 'bits' like rocket, feta etc
roasted vege and halloumi in pitta or wraps
roasted vege and paneer with spices on top of a naan bread
M&S cheese and onion fake fishcake things, with salad
quick stir fry and microwave rice
omelettes and nice bread and salad

The biggest problem here is it's getting too cold for salad!

Any more ideas very much appreciated.

My veggie flat mate used to make spaghetti and ketchup Grin

I prefer roasted vegetables or stir fry

Spanakopita is easy and delicious

Roast your veggies like butternut squash and add with coconut milk to blender to make soup

Aubergine Parmigiana is simple and delicious

Jamie Oliver has a pasta recipe in his veg book called silky courgette bow ties. When the two of us cook it together it takes just over 15 minutes and tastes super fresh. It serves four technically but we reduce the pasta by half and use the same amount of everything else in the recipe.

Is the freezer an option? We usually have soups, risottos and vegetarian bean chilli in the freezer to pull out for quick dinners.

Dhal is amazing and so easy to cook, we have that at least once a week.
Sweet and sour tofu with rice. I fry the deep fried Chinese tofu pieces (you could use any protein) with onions, peppers and garlic and then remove that and in the same pan cook a sweet and sour sauce (ketchup, sugar, vinegar, garlic and onion powder, soy sauce and corn starch with water) let it thicken and then add the ingredients back and caramelise. It takes maybe fifteen minutes including the rice and is always a favourite.

I also like making a stew in the cooker. Oxo do meat free beef stock cubes, with a few tbs of bisto powder it’s a lovely rich stew.

Sausage casserole from the powdered sauce was a favourite before we went plant based too and I just use veggie sausages with mashed potato.

We also like a Mac and cheese/tomato pasta with garlic bread.

Spag Bol, lasagne - I cook it in the slow cooker and freeze the leftovers.

Egg fried rice with microwave rice, spring onion, frozen peas and soy sauce
Falafel wraps with humous (we like Cauldron falafel)
A tin of vegetable curry with added chickpeas (you can get mini tins), served with microwave rice

We eat dhal a lot and it freezes well.

We've only got a small freezer so can't put many batch cooked things in it.

Slowcooker not much use as I have to leave the house so early. Also I don't eat tinned tomatoes and so many veggie slowcooker recipes rely on them.

I make a pretty quick pasta arabiata with chopped tomatoes, onions, garlic, chilli, basil.
I also buy the big field mushrooms chop the stalk and sauté with some red onion, garlic and mixed herbs. Mix with some microwave wild rice. Season well, stuff into the mushrooms and top with dolcelatte. Put in the oven for 20 mins and voila! I tend to serve with stir fried tenderstem (cooked in the pan I cooked the onion and garlic in to save washing up!)

You've just reminded me that I like roasted mushrooms to make into a 'burger' and they're super easy.

I don't eat chopped tomatoes. It makes pasta a bit of a pain tbh!

Roasted peppers - cut red pepper in half, fill with cherry Tom’s, olives, garlic and feta and bake in oven for half an hour/ serve with rice and greens

I do love stuffed peppers. Used to do a lovely thing where I stuffed them with feta, red onions, herbs and lemon juice. Must do it again.

Green soup- frozen or fresh broccoli, spinach, peas- cook leek in butter, add green veg and veg stock, cook through and blend. Serve with some fresh herbs, a dollop of cream and bread and cheese

One of my favourites we have every week is a veg tagliatelle. Roast courgette & aubergines (this part takes the longest - I guess you could saute them instead to be quicker). Then add a little garlic & chilli (I use the ready chopped frozen versions from aldi), add an aldi chilli & tomato pasta sauce, cook the tagliatelle & mix.

Ooh this sounds right up my street. I've never met a frozen artichoke though.
