I've been asked to make a chili for our staff development day.
Can any one help with a decent chili recipe for me please.

You've not said if you need a vegan alternative, but this Felicity Cloake recipe is incredible. it has a richness that is often missing in meat free chillis. Can't help with a personal recommendation for a meat based one but the same series has a beef chilli recipe and I rate the How to cook the perfect... series recipes highly in general.

I make the BBC good food one, and up the cocoa, chilli and Oxo portions. Slow cook it and it has a devoted following of family and friends who rave about it but it's just a standard (nice rich, meaty) chilli

I'm veggie and make a great black bean chili ( we had that tonight with wheat berries and freekah )but I'm trying to be inclusive for the people that eat meat.

Nigella does both a great chilli (topped with cornbread though I never bother with the topping) and a veggie version.

Jailhouse Chili

2 large onions, diced
6 cloves garlic, finely chopped
6 tbs olive oil
3 tbs chili powder
5 red jalapeños, finely chopped
1kg minced beef, 20% fat
500g stewing steak, cubed
6 rashers streaky bacon, diced and fried
2 tbs ground cumin
2 tbs oregano
1 tbs cayenne
1 tbs turmeric
500ml dark beer
500ml beef stock
3 x 400g cans chopped tomatoes
2 tsp garlic salt

In a large frying pan, saute onion and garlic in olive oil. After a few minutes add half the chili powder and half the diced jalapeños. Cook for a further 5 minutes. Add the onion mixture to a large casserole, leaving the oil in the pan.

In a mixing bowl, combine mince, chuck steak, fried bacon, the rest of the jalapeños and half the cumin, oregano, cayenne and turmeric. Mix well.

Brown the meat in 3 or 4 large clumps in the onion pan until brown on the outside. Don't worry about it not being cooked in the middle. Add this to the casserole.

Add the tomatoes, beef stock, half the beer and the second half of the cumin, oregano, cayenne and turmeric to the casserole.

Simmer on a very low heat for 1 hour.

Add second half of chili powder, the garlic salt and the rest of the beer. Simmer on a very low heat for another hour (or more) until the beef is cooked.

Serves 6 - 8.

The best one I've ever had, stolen from an Ex. It's from Kennys Creole Cookbook or something like that.

This serves six:

Packet of lean minced beef
Punnet of mushrooms
Three peppers
Garlic clove
Red onion
Tin of kidney beans
Tin of tomatoes
Pinch of chilli flakes
Pinch of cumin seeds
Two squares of dark chocolate

Method:

Brown the mince, and chop your veg at the same time
Add veg to mince until soft
Add spices
Add toms/beans
Melt in your chocolate

I tend to make this at lunchtime for dinner and cook down low for a few hours. I also usually add a glug of red wine. Serve with tortilla chips, soured cream, and guacamole.

@Mrskipling that recipe sounds amazing. But is that tablespoons of spices ie. 3 tbs of chilli? Or does it mean something else?
Also what is dark Beer - Guinness?

My only concern is that most of these serve 6 to 8 people.

I am going to have to triple the amount of ingredients, which is fine, but in the past I've not always had good success and multiplying the recipe to cater for more people.

Hopefully it will be ok, or I could do 3 seperate pots and add them together to serve.

My fave is this Gordon Ramsey recipe that he made on the F Word in a chilli off with Janet Street Porter. He won.

It's super tasty yet also quite quick and easy.

@Fferny1 yes it means tablespoons. You can of course adjust to taste. I do tend to use alot less liquid in it as I prefer it less soupy. For the dark beer I have used Guiness and it was fine but I usually opt for a dark ale.

@Fferny1 I actually don't think it's very hot once it's added to all the other ingredients as there's a hefty amount of meat and quite a bit of liquid, but I do enjoy a Phall or a Vindaloo so maybe I am not the best judge Grin.

You should try mixing 75g sour cream, 75g mayonnaise, juice of 1/2 lime and a pinch of salt. I found it in a Mexican recipe book and it reminds me of the crema you get in Mexican restaurants.

As I've just spent another work potluck looking at all the food but unable to eat any of it due to it all either containing wheat/gluten and dairy and if it's fruit, it's put on the same platters as cakes and bread or served with exactly the same utensils, so is cross contaminated, is it possible that you could consider making something gluten free?

This means making sure any stock is GF, no oats to thicken it (as many celiacs can't have even GF oats), no flour or gravy granules to thicken it, no beer in the recipe, and making sure that the tortilla chips/salsa/Guacamole are also GF (no Doritos) and any soured cream/etc is on the side and totally separated.

It feels a bit crap to not be able to eat anything and if you bring something in, you know that the people tucking in to it haven't given a second's thought to reciprocating.

However theres now one in my team that have special dietary needs needs ( except me!)

It is something worth bearing in mind for future though.

I'm glad that is the case.

However (and I mean this kindly), the 34 other members of staff at my work would say exactly the same. I don't hold this against them, my shitty immune system isn't of significance to their lives and some probably think privately - if it's registered with them at all - that I'm being fussy or making up excuses to sit in my office and avoid food related occasions.

Thank you for thinking about it, though.
