Your favourite pasta dishes

Please.

FIL has recently got a new girlfriend who doesn't eat carbs, so now FIL doesn't eat carbs. He bulk ordered a lot of various shapes of good quality dried pasta online last year Hmm, which he now doesn't want so we have inherited it. We actually don't have much storage in our house currently so it is currently lining our bookshelf and needs to be eaten. But we are already tired of our usual pasta recipes, so are looking for some inspiration.

No dietary restrictions etc, only thing we don't love are creamy mushroom sauces (although mushrooms are fine when not the main focus). All ideas appreciated, thanks!

I make this quite often.

It isn't always pappardelle, I use all kinds of pasta, whatever I have in.

You can use sausage-meat instead of minced pork too.

This is a recent discovery. We’ve made it three or four times in the last three weeks! It’s nice with leek instead of fennel too.

Ottolenghi again. Dal pita. Officially broken up lasagne sheets but you can use any small pasta shapes. This one is my favourite comfort food. It freezes well too.

Pasta with pesto, onions, bacon and mushrooms and peas (add pine nuts too!

Chicken cooked in pan with pesto and cream cheese or creme fraiche... add to pasta with cherry toms etc

Roast butternut squash with garlic, cherry toms, chorizo chunks and red onion - add to spaghetti with dollop of creme fraiche and loads of parmesan.

Macaroni cheese!!!

Chop up bacon and spring onions and fry them together until the bacon is cooked.
Melt 50g of butter, and once bubbling, add 50g flour. Don't get too hung up about the measurements, I just eyeball it. Cook the flour for a minute, then slowly whisk in 400-450ml milk. Continue stirring until thick and boiling, or near enough.
Add 250g cheese, stir in, then add cooked pasta. (I normally do about 300g to feed four but we have two with small appetites and normally have it with garlic bread too.) Add the bacon and spring onions.
Put in a dish, top with cheese and/or breadcrumbs and bake at 180C for 15-20 minutes.

Bonus tip: adding mustard and garlic powder to the sauce elevates it. Just half a teaspoon of each.

Came here to suggest Jamie Oliver's recipe but PP already suggested it!

One of my fave pasta dishes at Vapiano is the cognac dish and I've only just found out they tweeted the recipe last year. I've recreated a few times without a recipe and just left out the cognac (didn't want to buy a whole bottle especially). It was still yummy even without its namesake ingredient. I like it because it's both creamy and tomato based.

Pasta, chicken breasts, tin of chopped tomatoes, 2 teaspoons of rose Harrisa paste and couple of handfuls of spinach, it has a lovely little kick to it because of the harrisa paste.

I saw a recipe here once that blew my mind. When making any cheesy pasta dish, boil the pasta in milk, not water (less liquid), and then when the pasta is cooked, and most of the milk absorbed - add a fucktonne of grated cheese. Instant and delicious!

I also love my take on Sicilian sardine pasta. Tinned sardines in spicy tomato sauce, raisins, capers, anchovies, fresh tomatoes topped with toasted breadcrumbs and flaked almonds.

I have various good sauce recipes:

Smoked salmon with crème fraîche and lemon.

Cheese of your choice (goats is a favourite), with leeks, pine nuts, and the sauce made up using lemon, ideally white wine and a bit of cornflour to thicken.

Slow cooker meatballs, with bought meatballs a big jar of tomato sauce and some frozen vegetables e.g peppers, onions and some chunks of sweet potato or butternut squash.

I also like a pasta bake with a chicken, pepper and courgette type tomato sauce which you top with rigatoni mixed with crème fraîche and grana padano, with extra grana padano on top.

Sausage and veg sauce pasta bake with bits of mozzarella stuffed through it, topped with cheddar.

And then the usuals: carbonara, Bolognese, macaroni cheese.

Other ideas
Tuna pasta bake
Mediterranean veg pasta bake - fry red onion, courgette, mushrooms, peppers, garlic, add a can of chopped tomatoes, a tin of kidney, a glug of balsamic vinegar, oregano, basil and season well. Mix with cooked pasta, pour into oven proof dish and top with breadcrumbs and a mix of cheddar and mozerella. Bake until breadcrumbs all crisp and cheese is melted.
Pasta with a sauce made from a mix of regular sausage meat and ndjua paste, garlic, onions, chopped tomatoes and fennel seeds. Add a splash of mix and allow to simmer on a very low heat.
Rigatoni with saint Agur, onion, garlic, spinach, sage toasted pine nuts.
And what we call holiday pasta! Linguine with chilli, cherri tomatoes garlic and fresh crab!

@BlackForestCake - There's a lot of pasta. 5kg of linguine, 2kg of orzo, 2kg stelline, 2kg paccheri, and more of basics like penne/fusilli/spaghetti that we already had in the pantry.

And yes we have pasta AT LEAST once a week, but we are only feeding 2 adults and a toddler with a small appetite in the evenings, so its going to take us a while to get through it

Orzo is really nice in soup. We also use it in salads.
