Does anyone have a tried and tested fried rice recipe that tastes just like takeaway.
Im hosting at Hogmanay and I'm planning on making chinese/Korean food but want some fried rice. I've tried in the past and it just doesn't taste the same! So I thought if I could get a good recipe I could practice between now and then.

Here you go, OP, from the horse’s mouth. If you want genuinely authentic takeaway-style food, you need MSG, which can be bought from any Chinese grocer.

Will serve 2

100g Rice
Water
2 tbsp soy sauce
2 tsp of sesame oil
2 rashers bacon chopped
50 g frozen peas
1 Egg
1 small onion chopped

Put water and half soy sauce and half sesame oil in pan with rice. Bring to boil and then simmer for 14 minutes.
Put remainder of sesame oil in wok and fry bacon and onion.
Whisk egg in a cup and then cook in microwave to scramble
When rice is cooked add to wok along with egg, frozen peas and remainder of soy sauce.

Fry for a minute or two then serve.

Adding the oil and soy sauce to the rice whilst cooking is the most important bit.

You need to cook the rice using a rice cooker. Make the day before. Let it sit on the warming setting to dry out once cooked for at least 30 mins. Then use a wok. Very high heat preferably gas. The key is to NOT introduce any additonal liquid while cooking. I only add my liquids (soy sesame oyster ) once cooked.

It won't taste the same but pre cook and cool your rice and that gives pretty decent tasting fried rice. I cook mine in the afternoon before I'm going to use it hot pan and soy and sesame.
This, plus spread it out to dry.

I do egg fried rice with leftover next day rice .
Sesame oil
Stir fry spring onion , rice, egg, and add peas and white pepper
Soy sauce and freshly chopped spring onion on top.
Yum!

Can't remember where I saw the recipe- maybe Ken Hom from years ago but Iv'e always followed these basic steps since:

make steamed rice and then leave it to cool and dry

Make egg pancakes - crack an egg in a mug, add salt and beat it thoroughly. In a wok or frying pan add a little sesame oil and once hot pour in the beaten egg. Allow it to set as a very thin pancake and then flip. Remove to a plate when cooked. Repeat until you have a little stack, at least one per person. When cooled, roll up each of pancakes and then shred so you end up with thin ribbons of egg.

Heat sesame oil in the wok and cook the cooled miles steamed rice, season with a little soy sauce. Kepler moving until heated through and slightly toasted in places.

Add the shredded egg, mixing it through the cooked rice. Season with a little more soy if necessary.

Serve - always been loved by our family.

You'll need a bit of
dark soy
Soy sauce
Lardons

And dried shrimp
Peas

Hot wok

Oil smoking wok
Garlic ginger
Lardons
Dried shrimps
Rice (made the day before and nice and cod and dry ) keep it moving
Tea dark soy
Tbs soy sauce
Keep it moving

Make a well in the middle add egg swirl with spoon until it scrambles

Stir fry

Voila

We make fried rice frequently. It's best to use day old rice. I use normal light soy sauce as I don't like the taste of dark soy sauce and sesame oil at the end. We never use onions, just lots of garlic with peas/bacon or any other protein. A couple of eggs cracked into a well & mixed well into mixture. Served with a fried egg on top & chilli oil on the side, plus maybe some lime. Top with crispy onions/garlic/coriander.
