Does anyone have a tried and tested fried rice recipe that tastes just like takeaway.
Im hosting at Hogmanay and I'm planning on making chinese/Korean food but want some fried rice. I've tried in the past and it just doesn't taste the same! So I thought if I could get a good recipe I could practice between now and then.

I think the reason mine doesn't taste like a restaurant (still pretty good IMO) is that i don't have a restaurant kitchen so my hob doesn't give me enough heat to play with. Particularly if I'm making large amounts. But I'll be interested to read other responses and find out where I'm going wrong Smile

IME nothing anyone makes at home ever tastes the same as takeaway

Watching with interest though, my attempt at fried rice was shocking

Buy some MSG and sesame oil. Definitely helps

It won't taste the same but pre cook and cool your rice and that gives pretty decent tasting fried rice. I cook mine in the afternoon before I'm going to use it hot pan and soy and sesame.

I am white so you may wish to ignore me,
but yy to sesame oil and msg
also make sure your cooked rice is chilled well before cooking. Needs to be cold and dry when it hits the hot oiled wok. Maybe watch Uncle Roger on youtube for what not to do Grin?

My tip is to only add sesame oil at the end when the heat is switched off… it looses its taste completely if you heat it

Mine is ok - I just fry up veggies and add ore cooked rice - when it’s ‘dry’ I shove it all over to she side of the pan then pour in beaten egg and give it (the egg) a stir (so a bit like scrambled egg). Then I quickly break up the egg and mix it in with the rice and veg. Plus loads of soya sauce.

Well that’s how I do it anyway.

Excellent step by step. I do the first version (scrambled egg) and use a bit more soya sauce.

We use a large frying pan rather than a wok we have electric so we can't get s wok hot enough.

I get best results with microwave packet rice. I’m never organised enough to cook fresh far enough in advance to get it cool and dry enough.

For me, the key to great egg fried rice is tk add more egg than you think and not to stir it too much so you get good pieces. Also take it off the heat when the egg is only just cooked or slightly under. It will continue cooking from the heat.

That's a good tip about the rice being dry, I've not attempted it with dry before.
Unfortunately my MIL can't tolerate MSG so can't add it.

I love Kimchi. Do you have a specific recipe. The best I've ever had was in Berlin and I've never tasted anything as good since.

I always save leftover boiled rice. Run through with cold water, drain and into freezer. I used this for fried rice, add soy sauce and sesame but it still doesn't taste like takeaway fried rice.

I cook my rice so that it's dry anyway (1 measure rice, 2 measure water, pan with tight fitting lid, bring to boil, turn down to lowest heat for 11 minutes, turn heat up for a few seconds and then off for 11 minutes, all without disturbing the lid).

Then I do meat/veg/spices in a wok in lots of hot oil, then I do the eggs hard and fast in the pan, then the cooked rice and herbs. I don't personally add many spices in fact but you could.

I use brown rice cooked, drained and stored the fridge for at least a couple of hours, preferably overnight.

Cook veg first, then egg, add rice, soysauce, shorty before the end add sesame oil and a bit of lemon juice.

I use the sachets of pre cooked rice. I mix in chicken stock powder (used to be able to buy tubs of knorr powder but they seem to have stopped doing it so mash up stock cubes instead)
Let the egg set a bit before stirring it in.
Chopped spring onions at the end.
Maybe some sesame oil. And soy to taste.
I also make it as a main meal and add chopped cooked chicken, prawns and peas

I don’t think you need msg - but def soy sauce and sesame oil. And def cold dry cooked rice. It’s a disaster if you try to do it with hot rice - it all clumps and sticks and can’t be fried.
