Your favourite Autumn family meals...

I am looking to create a new meal plan for 3 weeks at a time. Fed up of the kids moaning 'it's always chicken' (it's not).

We eat everything except no gluten (but use GF alternatives so not really an issue). We try not to eat fish/sea food more than once a fortnight and would like to eat less meat so some veggie options would be well received. Kids are a bit adverse to spice still. Ideally less than 30-40 mins prep time.

My first week looks like this:

Chilli with nachos and guacamole
Apple, sausage, sweet potato bake
Ratatouille with Halloumi
Hot dogs or steak burgers with sweet potato wedges
Chicken with mascarpone, peppers, mushrooms with rice or pasta
Cottage / Shepherd's Pie
Prawn Saganaki with rice

Anyone care to share they're favourites for the next few months?

Roasted root veg with pearl barley, rocket, and halloumi or Goat's cheese or feta. Could add chickpeas or butter beans or whatever.

I had this last week and it was lovely, it's definitely going to be a regular meal. I think it was nicer cooked for about 15 minutes longer than it said.

I also do this every couple of weeks. I reduce the oil a bit and use light coconut milk to reduce the calories. It keeps well too if you don't add the spinach.

Home made cassoulet. Pork, spicy sausage, onions, garlic, tomatoes, cannellini beans, slow simmered. Perfect for cold autumn evenings. Smile

@Mintjulia that sounds yummy. Which cut of pork do you use? Sounds like something that would also work in a slow cooker.

I use my slow cooker a lot in the colder months. Sausage casserole, chicken casserole, beef stew, potato and bacon bake, meatballs etc. Alongside roast dinner, macaroni cheese, spaghetti bolognese, curry.

For the cassoulet, I use diced pork shoulder steaks that have some fat marbled through them, and then chorizo or bacon or sometimes a couple of boned chicken thighs with some smoked paprika. It's very adaptable.

Good in a slow cooker if you sear the meat first. I have it with brown rice and French beans or broccoli.

Roasted butternut squash and fennel with pasta.
Butternut squash and mushroom lasagna.
Roasted spiced Beetroot and cauliflower with coconut rice.

Burnt aubergine chilli.

Jamie Oliver's sausage and apple bake is a winner here!
The only thing is I missed the red wine vinegar the first time as it wasn't listed on the ingredients list, but on the instructions and it definitely makes all the difference

I'm trying to compile a similar list op so thanks for the thread. I would eat all of the above delicious meals but dh is cheese and mushroom free Shock
So far I have:
Chilli
Lasagna
Shepherd's pie
Bolognese
Roast chicken
Chicken curry - dh won't eat either but tough
Fajitas
Enchiladas
Stuffed chicken fillets with veg and herby potatoes
Veg curry with chickpeas
Egg fried rice with broccoli and cashews
Freezer/simple dinners for easy days: breaded cod, veg and corn on the cob, homemade chips and sausages/burgers, carbonara

This garlicky vegetarian stew is lovely.

I always think of fish pie as a real autumn/winter warmer.

Haven’t tried this vegan goulash recipe yet but am looking forward to giving it a go when the colder weather comes in.

This sausage casserole with garlic breadcrumbs is very tasty. We use veggie sausages and add extra veg.

Not great for Op of course but I always think Autumn is a time for pastry - toad-in-the-hole, homity pie etc. Pure comfort food Smile.

@FizziWater they sell them in tubs in supermarkets or just but a whole pomegranate. Honestly, it's delicious. Suitable for both summer & winter. You have to cook the chicken thighs for longer than it says. I guess you could use breasts as well but it would be drier.
