Fool proof pizza dough recipes?

I just had a disastrous attempt at making pizza dough on our bread maker but have promised a disappointed three year old that we'll make pizza tomorrow instead - so don't want a repeat failure! It was really runny and hadn't risen. Would be really grateful for either fool proof recipes that don't use a bread machine at all or if anyone knows where I went wrong with the bread maker and so how I can avoid it happening again? Thank you!

This one doesn’t need any yeast and is fabulous! The edges still stay nice and soft/chewy. This is my easy go to winner every time Smile

Brilliant, thanks all! @Nuggetnugget do you mean you use the whole sachet? I'm wondering if that's where I went wrong - I used dried yeast and measured it out, as per the instructions for the bread maker, but it was only a small proportion of the packet so I wonder if I have a different kind of dried yeast than the instructions meant and I should have used the whole thing?

An easy one I use is plain yogurt and plain flour, you do need to roll it this but makes a lovely crisp base.

Foolproof is equal amounts of yoghurt (Greek) and self raising flour (and add salt)

It’s very quick (takes 3 minutes), no need to “proof”, and easy to roll out

Roll out in circles, cook in non-stick frying pan for about 2 minutes each side, on low heat

Add toppings

Put in oven

The yoghurt can’t be low fat btw

Honestly why bother making it, we have got lazy now and just order it from Ooni. They sell semi frozen sour pizza dough, delivered to your door. It’s really good.

This might actually be what I do in future, depending on how it turns out tonight, but I promised DS we'd make pizza tonight after last night's disappointment so I have to give it another go!

I'm leaning towards the yoghurt option since so many people are endorsing it - the one slight annoyance is that that means going out for yoghurt whereas we have everything in for a yeast recipe.

We cheat & use this. From Tesco, waitrose & Ocado. Not sure about Sainsbury’s. Takes 7 minutes to defrost in microwave or 4 hours out of freezer.

I've used this one for years

One cup warm water
2 tablespoons of caster sugar
1 teaspoon of salt
2 tablespoons butter
450g strong plain bread flour
1 teaspoon sachet yeast

Makes two large pizzas

Another vote for Sainsbury's. I use 300g plain white flour and 100g wholemeal

Before we got lazy, this is how DH made his dough.

DH said use two packs 15g of fast acting packet yeast, add some sugar about 40g, helps the yeast to react, strong 600g flour, tablespoon of veg oil.

Method

Mix dry ingredients first
Large glass of lukewarm water
Mix gradually making sure the dough doesn’t get to wet.
Knead 9 - 10, dough will get stretchy and elastic and will change in colour.
Cover with cling film and put somewhere warm for a couple of hours, knock it back and knead again.

I’ve used this one for years and it’s great.
Ignore the fact that it says Lebanese flatbread - in the video that came with it he says he got the dough recipe in Italy from a chap who only had two toppings for his pizza.
You do have to prove it, but by sticking it in the fridge overnight.

we do
mix 1cup water and one cup of flour with the yeast (I use tins, but 1 tablespoon is about a sachet) once it starts to bubble add 500g flour, 1 tablespoon olive oil, 1 tea spoon salt and about 1 cup of water. then knead and rest the dough for half an hour. knead again and shape into pizza bases.

how much water the flour needs delends on many factors including the weather, so don't add the water at once.

I use easy bake yeast from a tin to make pizza dough in bread maker. Allinsons brand. I don't think you're supposed to use the dried active one in bread maker.

tbh making it in the breadmaker should be fine as long as it kneads properly.
