Fool proof pizza dough recipes?

I just had a disastrous attempt at making pizza dough on our bread maker but have promised a disappointed three year old that we'll make pizza tomorrow instead - so don't want a repeat failure! It was really runny and hadn't risen. Would be really grateful for either fool proof recipes that don't use a bread machine at all or if anyone knows where I went wrong with the bread maker and so how I can avoid it happening again? Thank you!

@AbsolutelySure

I've used this one for years

One cup warm water
2 tablespoons of caster sugar
1 teaspoon of salt
2 tablespoons butter
450g strong plain bread flour
1 teaspoon sachet yeast

Makes two large pizzas

Yes, I make this in the breadmaker Smile

Thanks all - I'm going to give the Sainsbury's recipe a go and will report back!

Yay! Do you have the fast action yeast? Dcs and I are making pizzas tonight, it's quick enough to be a quick tea.

This is what I've got - is this right? I've used it in the bread maker to make bread before and it was fine but still puzzled by my failure yesterday!

it might be the humidity at the moment.
flour just can absorb as much water.

@Hardbackwriter yes I use the sainsburys version of those foil sachets

Another vote for equal amounts of yoghurt and flour plus a pinch of salt. This method totally revolutionised the way I used to make pizza. No more proofing for ages and it can be ready to ro within 5 minutes.

The dcs and dh also prefer the new crispy crust and chewy middle of this recipe instead of the old recipe.

StealthPolarBear · 25/07/2021 16:14

Yes I use the allinson one as that's what the local shop sell but as long as it says fast action or similar it will be fine.

They're ready to go in the oven and they look more or less like pizza! Will report back once they're cooked and (hopefully!) consumed...

I use this one which never fails to work!

We make Pizzas every Saturday using a mixer

Mix and leave for 5 minutes until it looks frothy:

320ml tepid water
7g dried yeast
1tsp sugar
2tbsp veggie oil

Add the yeast mixture to:

550g strong flour
Pinch of salt and pepper

Mix until smooth, leave to grow for at least an hour. Cover with a tea towel.

It will make 4 decent sized pizzas.

Success! They were pretty good, and certainly pleased a little boy who was delighted that he was eating pizza that he made 'all by myself'. They were a bit bready but not unpleasantly so.

Thank you so for all the tips! I might try making the yoghurt base next time to compare

My top tip for proving is to put the bowl on a heated airer if you have one! Works a treat and makes masses of bubbles in the dough

StrawberrySquirrelThief · 25/07/2021 19:31

Bit late to this but we use a River Cottage one:
250g plain flour
250g strong flour
Teaspoon of yeast
Salt
2 tablespoons of olive oil
325ml of tepid water
You’ll need extra flour for kneading. Leave to rise for a couple of hours and off you go. Makes 3/4 pizzas and we often freeze half the dough.

StealthPolarBear · 25/07/2021 19:34

I did the same. Delicious as always.

robotcollision · 25/07/2021 19:36

I use a strong flour ready-mixed bread mix (Sainsbury or Waitrose) and just add a tablespoon of olive oil to the water. Leave to rise longer than usual and then use lots of plain strong flour to roll it out on. Never fails.

Roselilly36 · 26/07/2021 06:24

They look brilliant OP. I bet your little one was 😃.

KittenKong · 10/08/2021 12:28

This - www.melskitchencafe.com/quick-and-easy-pizza-dough/

I used to do it the ‘old fashioned’ way and was pushed for time one day. It really works and makes a lovely base. I sprinkle polenta on the pan too.

I love pizza!

youngestisapsycho · 10/08/2021 12:35

We put our bases in large heated frying pan, then start adding the toppings.. let the base get nice and crispy than put pan under the grill to heat toppings/melt cheese.
Best way for a nice crispy base.

Get the PizzApp and some dealer scales. Put in how many dough balls you want of what weight, the time and temp and it gives you all the quantities.
