cheese and potato pie?

I have rashly told DS1 that I would make cheese and potato pie for tea today but have no idea of a recipe or indeed what it would be like! I'm thinking less like a pie with pastry and more like a bake IYSWIM.

Anyone got a simple recipe for such a thing? If indeed such a thing exists?

Boil enough potatos for everyone your feeding.
Mash them after, with milk and 1 egg.
Add cheese to the mash mixture (as much as you like - i put loads in mine)
Add salt and peper to taste.

Consistency wants to be thick, but not dry like usual mash, add more milk to make it soggy.

Put into baking dish.
Add cheese over the top (again i use loads)

Bake in oven (about 180) for about half-3/4 of an hour.

I sometimes add onion to the mash - but kids dont usually like it.

ooh - thanks for that - so really it's just baked mash?!
I was thinking it would be more like a dauphonoise - you know with sliced spuds layered up. Your way sounds easier

I make one that you could add bacon, tomatoes and mushrooms to to make it more of a meal

chop onion and put in the bottom of an ovenproof dish, peel and slice potatoes and put 2/3 layers on the top pour on some milk so it covers the bottom layer but has soaked the top and pop in the oven for about an hour at 180 ish. check after 30 mins to make sure it hasn't dried out and add more milk if needed. after 1 hour keep an eye on liquid and cover with grated cheese and cook for another 30 mins.

I make it with 1/3rd sweet potato, 2/3rd potato, lots of fried onion & no egg

Mmmm that's net Wednesdays lunch (today it is baked potato with cheese)

all sounds yummy - we don't eat meat and I'm not sure the DSs would go for mushrooms but I think I will try some onions in there as well.

Could I prepare it earlier and then bake it when I want to eat it or would it not be so nice then?

I like the sweet potato and ordinary mixed idea, will have to try that.
Bacon too..mmm sounds even more yummy.
There is nothing better than cheese and bacon!

I often prepare mine early, then pop it in the fridge.
Will need a little longer cooking time if its chilled before cooking tho.

I layer mine too;
parboiled sliced potatoes
onion
loads of cheese
(anything else that's looking sorry for itself in the fridge )
then pour a mixture of milk, egg s&p over the top and bake on low for about an hour mmmmm

However I found this which looks quite good too

POTATO CHEESE PIE

3 lbs. potatoes, peeled & cut into cubes
2 garlic cloves
butter
grated Parmesan cheese
sour cream
2 eggs, beaten to blend
2 tbsp. bread crumbs
Salt & pepper
Cayenne pepper
chopped onion
grated mature cheddar cheddar
Parmesan cheese and parsley to top

Boil potatoes, drain and mash with the crushed garlic and butter to taste. Add Parmesan cheese, sour cream and eggs. Season with salt, pepper, cayenne and chopped onion. Mash until fluffy. Put 1/2 mixture into pie plate. Cover with cheddar cheese. Top with remaining potato mix, sprinkle with Parmesan cheese, breadcrumbs and parsley. Dot with butter, bake until brown and crusty, about 45 minutes at 180.

When I made the mash version in HE at school we were taught the importance of presentation and that it was essential to decorate the top with sliced tomato

PMSL - that's why I put parsley on tbh, brightens it up a bit, tends to look a bit anaemic otherwise...

I think the golden cheese crust once baked makes it look yummy. I have done the sliced tomato thing too.

I always get confused because sweet potato should count as a 5 a day veg (it's the same colour as carrot fgs) but sometimes it does count & sometimes it doesn't

I have a good wersion of a homity pie on my blog somewhere.. here it is homity pie every one loves it. sometimes i leave the pastry out and its more of a potato cheese bake than a pie but tastes as good.

aaagh!!! have prepared wisteria's one but forgot to parboil the potatoes - that'll teach me to try and do too many things at once

will it matter? Will I have to cook it for hours?

Cheese and potato pie in our house is mashed potato with lots of cheese mixed in. Add Philly cheese too for extra creamyness. Yum.

it was fine wisteria - I think next time I would parboil them though

Needless to say DS1 and 2 refused to even try it although DS3 tucked in quite happily - bless him - only 9 months so hasn't learnt to say "I am not eating that"

tommy- sorry 1 and 2 didn't eat it, my ds is a fussy eater sometimes, for no rason he will just decided he hates whatever it is, we have just tried ignoring him and saying no pudding if he dosen't eat his dinner. sometimes it works and somtimes it escalates to loss of stories and a trip to bed, then all the sudden he is hungry and wants to eat his dinner

My tack was the same as my parents - this is dinner, if you don't eat it, you will go hungry. End of.....

If we ever had a situation like that, the dinner would be clingfilmed until they had hunger pangs. The trouble with dcs today IMHO is that they are never truly 'starving'.

I think I know what you mean wisteria - DS1 has never told me he's hungry.

Do you think it's because we are told that they have to eat little and often - snacks etc that when tea time comes they aren't hungry?

Although, if I told him he wasn't having anything else (as I do very often) he doesn't care - he often comes home from parties not having eaten anything at all
